  1. 1. Peel the potatoes and wash them thoroughly.
  2. 2. Slice the potatoes into very thin rounds or grate them finely.
  3. 3. Halve the onion, peel it, and dice it into small cubes.
  4. 4. Clean the chanterelles with a kitchen towel.
  5. 5. Cut the mushrooms into quarters if they are large.
  6. 6. Wash the parsley and dry it well.
  7. 7. Pluck the parsley leaves from the stems and chop them finely.
  8. 8. Wash the chives and thyme and dry them.
  9. 9. Slice the chives into fine rings.
  10. 10. Strip the thyme leaves from the stems.
  11. 11. Heat the butter in a pan over medium heat.
  12. 12. Sauté the onion cubes for about 2 minutes.
  13. 13. Add the potato slices and fry them for about 5 minutes.
  14. 14. Pour 50 ml of water into the pan.
  15. 15. Let the water evaporate completely.
  16. 16. Add the chanterelles and roast them for about 2 minutes.
  17. 17. Deglaze the pan with white wine and cream.
  18. 18. Season the dish with thyme, salt, and pepper.
  19. 19. Let everything simmer for about 15 minutes.
  20. 20. Serve the skillet in deep plates.
  21. 21. Garnish the dish with the chopped parsley and chive rings.
