🍽️ Chanterelle Potato Skillet

Ingredients
- potatoes, mainly waxy 1 kg
- onions, yellow 1 pc
- chanterelles 400 g
- parsley, fresh 25 g
- chives, fresh 15 g
- thyme, fresh 10 g
- butter 2 tbsp
- white wine, dry 200 ml
- whipping cream 500 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into very thin rounds or grate them finely.
- 3. Halve the onion, peel it, and dice it into small cubes.
- 4. Clean the chanterelles with a kitchen towel.
- 5. Cut the mushrooms into quarters if they are large.
- 6. Wash the parsley and dry it well.
- 7. Pluck the parsley leaves from the stems and chop them finely.
- 8. Wash the chives and thyme and dry them.
- 9. Slice the chives into fine rings.
- 10. Strip the thyme leaves from the stems.
- 11. Heat the butter in a pan over medium heat.
- 12. Sauté the onion cubes for about 2 minutes.
- 13. Add the potato slices and fry them for about 5 minutes.
- 14. Pour 50 ml of water into the pan.
- 15. Let the water evaporate completely.
- 16. Add the chanterelles and roast them for about 2 minutes.
- 17. Deglaze the pan with white wine and cream.
- 18. Season the dish with thyme, salt, and pepper.
- 19. Let everything simmer for about 15 minutes.
- 20. Serve the skillet in deep plates.
- 21. Garnish the dish with the chopped parsley and chive rings.
