  1. 1. Wash the apples and pears thoroughly under running water.
  2. 2. Quarter the apples and pears.
  3. 3. Remove the cores and seeds.
  4. 4. Cut the fruit into small cubes.
  5. 5. Wash the lemon.
  6. 6. Grate about 1 teaspoon of the zest finely.
  7. 7. Cut the lemon in half.
  8. 8. Squeeze the juice from the lemon.
  9. 9. Place the diced apples and pears in a pot.
  10. 10. Heat the fruit for about 3 minutes.
  11. 11. Sprinkle the fruit with sugar.
  12. 12. Caramelize the sugar for around 2 minutes.
  13. 13. Deglaze the fruit with grape juice.
  14. 14. Add a cinnamon stick to the pot.
  15. 15. Add 1 tablespoon of lemon juice.
  16. 16. Simmer the compote over medium heat for approx. 5 minutes.
  17. 17. Cook the fruit until it is tender but still firm.
  18. 18. Place the cream in a bowl.
  19. 19. Whip the cream stiffly using a hand mixer with the whisk attachment.
  20. 20. Place the mascarpone and yogurt in a separate bowl.
  21. 21. Add powdered sugar.
  22. 22. Add vanilla sugar.
  23. 23. Add the grated lemon zest.
  24. 24. Add 1 tablespoon of lemon juice.
  25. 25. Mix the ingredients well together.
  26. 26. Gently fold the whipped cream into the mascarpone mixture.
  27. 27. Taste the cream and adjust seasoning if needed.
  28. 28. Cut the Baumkuchen horizontally into three even slices.
  29. 29. Wash the mint.
  30. 30. Dry the mint.
  31. 31. Pluck the mint leaves from the stems.
  32. 32. Place one slice of Baumkuchen in a large serving dish.
  33. 33. Spread some cream onto the cake slice.
  34. 34. Fill the hole in the center of the Baumkuchen with cream.
  35. 35. Layer the apple-pear compote, mascarpone cream, and additional Baumkuchen slices alternately.
  36. 36. Garnish the cake with mint.
  37. 37. Plate the cake and serve it.
