🥗 Crispy Oven Roasted Cabbage Salad with Apples and Almonds

Ingredients
- White cabbage 0.5 pc.
- Olive oil 3 tbsp
- Salt pinch
- Onions, red 1 pc.
- Apples, red 2 pc.
- Almonds, whole 70 g
- Organic lemons 0.5 pc.
- Chili flakes 0.5 tsp
- Honey 1 tbsp
- Yogurt, plain 200 g
- Mayonnaise 2 tbsp
- Dill, fresh 10 g
Instructions
- 1. Preheat the oven to 190 degrees Celsius with fan.
- 2. Wash the white cabbage and cut it into bite-sized strips.
- 3. Toss the cabbage strips in a bowl with two tablespoons of olive oil and a pinch of salt.
- 4. Spread the cabbage evenly on a baking sheet.
- 5. Roast the cabbage in the oven for about 35 minutes.
- 6. Turn on the grill for the last five minutes to make the cabbage crispy.
- 7. Remove the baking sheet and let the cabbage cool down.
- 8. Slice the onion into thin rings.
- 9. Wash the apples and cut them into thin wedges.
- 10. Roughly chop the almonds.
- 11. Wash the lemon and finely grate the zest.
- 12. Squeeze the halved lemon to get the juice.
- 13. Heat the remaining olive oil in a small pan.
- 14. Sauté the onion rings and almonds in the pan until soft.
- 15. Add the lemon zest, chili flakes, one tablespoon of honey, a pinch of salt, and one teaspoon of lemon juice to the pan.
- 16. Let the mixture simmer for about two minutes.
- 17. Remove the pan from the heat and let the mixture cool down.
- 18. Mix yogurt and mayonnaise in a small bowl.
- 19. Season the sauce with some lemon juice and salt to taste.
- 20. Wash the dill and shake it dry.
- 21. Pluck the dill tips and add them to the sauce.
- 22. Mix the cooled cabbage with the apple wedges.
- 23. Drizzle the salad with the yogurt sauce.
- 24. Sprinkle the salad with the roasted almonds.
