🍽️ Smoked Mackerel Fillets with Ratatouille and Rice

Ingredients
- mackerel, smoked 400 g
- onions, yellow 1 pc.
- garlic cloves 2 pc.
- eggplants 1 pc.
- zucchini 1 pc.
- pepper, red 1 pc.
- vine tomatoes 500 g
- olive oil 3 tbsp
- herbs of Provence, dried pinch
- salt pinch
- pepper, black ground pinch
- vegetable broth 100 ml
- long grain rice 300 g
- organic lemons 1 pc.
- basil, fresh 20 g
Instructions
- 1. Take the mackerel out of the fridge. Pat them dry with a kitchen towel. Set them aside to reach room temperature. Preheat the oven to 200 degrees Celsius with fan.
- 2. Peel the onions and garlic. Dice them finely. Wash the eggplant and zucchini. Cut off the ends. Slice the vegetables into about half-centimeter thick rounds. Wash the peppers. Cut them in half. Remove the stem and seeds. Cut the peppers into coarse chunks. Wash the tomatoes. Remove the stems. Cut the tomatoes into quarters.
- 3. Place the prepared vegetables in a baking dish. Add two tablespoons of olive oil. Sprinkle with Herbs de Provence. Season with salt and pepper. Mix everything well. Distribute the vegetables evenly in the dish. Prepare the broth according to package instructions if necessary. Pour the broth over the vegetables. Simmer the ratatouille in the oven for about 30 minutes. Stir occasionally.
- 4. Put the rice in a pot. Add 700 milliliters of salted water. Bring the water to a boil. Cook the rice for about 15 minutes.
- 5. Wash the lemon. Pat it dry. Cut it in half. Squeeze out the juice. Season the mackerel fillets with some lemon juice. Season with salt and pepper. Drizzle the fillets with one tablespoon of olive oil. Place the fillets on the vegetables in the baking dish after about 25 minutes. Let them warm up in the oven for about 5 minutes.
- 6. Wash the basil. Shake it dry. Pluck the leaves from the stems. Finely chop the leaves. Remove the ratatouille and mackerel fillets from the oven. Fluff the rice with a fork. Season the rice with salt and a little lemon juice. Plate the rice, vegetables, and fish. Sprinkle everything with the chopped basil. Enjoy your meal! Tip: Since the fish is already smoked, you can also serve it cold. So you don't necessarily have to heat it in the oven.
