🍽️ Vegetable Tagine

Ingredients
- yellow onions 2 pc.
- carrots 4 pc.
- green bell pepper 2 pc.
- Hokkaido pumpkin 0.5 pc.
- oil 2 tbsp.
- cinnamon pinch
- Raz el Hanout spice pinch
- salt pinch
- vegetable broth 600 ml
- orange juice 4 tbsp.
- couscous 200 g
- fresh parsley 20 g
- organic limes 1 pc.
Instructions
- 1. Halve, peel, and slice the onions. Wash, peel, and slice the carrots. Wash the bell pepper, halve it, remove the stem and seeds, and dice it. Wash the pumpkin, halve it, scrape out the seeds, and cut into cubes.
- 2. Heat the oil in a pot over medium heat and sauté the onions together with the carrots, bell pepper, and pumpkin for about 5 minutes. Season with cinnamon, Ras el Hanout, and salt. Then deglaze with 300 ml of broth and orange juice and bring to a boil. Cover and simmer for approx. 12 minutes.
- 3. Heat 300 ml of vegetable broth in another pot and pour the warm broth over the couscous in a bowl. Cover the bowl with plastic wrap and let it swell for about 10 minutes.
- 4. Wash the parsley, dry it well, pluck the leaves from the stems, and chop coarsely. Wash the lime, halve it, and squeeze out the juice.
- 5. Taste the tajine. Fluff the couscous with a fork, stir in the parsley, and refine with lime juice. Serve on plates together with the tajine. Enjoy your meal!
