🍽️ Vegetable Skewers with Creamy Nut Sauce

Ingredients
- Carrots 2 pcs
- Kohlrabi 1 pcs
- Salt pinch
- Cherry tomatoes 250 g
- Zucchini 1 pcs
- Shallots 4 pcs
- Cashew nuts 4 tbsp
- Walnut kernels 4 tbsp
- Margarine, vegan 100 g
- Curry powder 1 tsp
- Pepper, black ground pinch
Instructions
- 1. Peel the carrots and the kohlrabi.
- 2. Cut the vegetables into large chunks.
- 3. Bring water to a boil in a pot with salt.
- 4. Cook the vegetables in it for about 10 minutes.
- 5. Drain the vegetables in a colander.
- 6. Let the vegetables cool down.
- 7. Wash the tomatoes thoroughly.
- 8. Remove the ends of the zucchini.
- 9. Cut the zucchini in half lengthwise.
- 10. Slice the zucchini halves into rounds.
- 11. Halve the shallots.
- 12. Peel the shallot halves.
- 13. Thread the prepared carrots onto the skewers.
- 14. Thread the kohlrabi onto the skewers.
- 15. Thread the tomatoes onto the skewers.
- 16. Thread the zucchini slices onto the skewers.
- 17. Thread the shallots onto the skewers.
- 18. Finely chop the nuts.
- 19. Mix the nuts in a bowl with the soft margarine.
- 20. Season the nut mixture with curry.
- 21. Season the mixture with salt.
- 22. Season the mixture with pepper.
- 23. Lightly coat the vegetable skewers with the nut cream.
- 24. Preheat the grill.
- 25. Grill the skewers for about 15 minutes.
- 26. Turn the skewers several times while grilling.
- 27. Serve the skewers with the remaining nut cream.
