🍽️ Vegetable Skewers with Grilled Cheese and Basil Oil

Ingredients
- Zucchini 1 pc
- Salt pinch
- Mushrooms, brown 250 g
- Grilled cheese 400 g
- Basil, fresh 10 g
- Olive oil 4.5 tbsp
- Pine nuts 2 tbsp
- Pepper, black ground pinch
Instructions
- 1. Wash the zucchini thoroughly and cut off the hard ends.
- 2. Slice the zucchini lengthwise into thin slices or use a peeler.
- 3. Lightly salt the zucchini slices.
- 4. Clean the mushrooms with a kitchen cloth if necessary.
- 5. Cut the grilling cheese into coarse cubes.
- 6. Wash the basil and shake it dry.
- 7. Finely chop the basil.
- 8. Thread the vegetables and cheese onto the skewers as you like.
- 9. Thread the zucchini slices onto the skewers in a snake-like pattern.
- 10. Brush the skewers with one tablespoon of olive oil.
- 11. Heat one teaspoon of oil in a frying pan over medium heat.
- 12. Toast the pine nuts in it for about two minutes until golden brown.
- 13. Place the pine nuts in a bowl.
- 14. Mix the pine nuts with the chopped basil and three tablespoons of olive oil.
- 15. Season the mixture with salt and pepper.
- 16. Preheat the grill.
- 17. Place the vegetable skewers with the cheese on the grill.
- 18. Grill the skewers for about eight minutes until golden brown.
- 19. Season the grilled skewers finally with salt and pepper.
- 20. Drizzle the skewers with the basil oil.
- 21. Serve the skewers and enjoy your meal.
