🍽️ Crispy Vegetable Fritters with Creamy Feta Dip

Ingredients
- Cabbage 1 pc.
- Carrots 4 pcs
- Zucchini 2 pcs.
- Onions, yellow 1 pcs
- Salt Pinch
- Thyme, fresh 10 g
- Feta 150 g
- Lemons 1 pcs
- Quark 40% fat in dry matter 200 g
- Pepper, black ground Pinch
- Almonds, ground 4 tbsp
- Sunflower seeds 4 tbsp
- Eggs 3 pcs
- Oil 6 tbsp
Instructions
- 1. Peel the kohlrabi and carrots. Cut off the tough ends. Grate the vegetables coarsely.
- 2. Rinse the zucchini. Remove the ends. Grate the zucchini coarsely as well.
- 3. Halve the onion. Peel it. Dice the onion finely.
- 4. Salt all the grated and diced vegetables. Place them in a sieve. Let them drain.
- 5. Wash the thyme thoroughly. Shake it dry. Strip the leaves from the stems. Chop the leaves finely.
- 6. Drain the feta. Crumble the cheese coarsely with your fingers.
- 7. Wash the lemon. Grate about one teaspoon of zest. Squeeze the juice from the lemon.
- 8. Add the feta, the quark, the lemon zest, and two tablespoons of lemon juice to a bowl. Stir the mixture well.
- 9. Season the dip with salt and pepper. Mix everything well.
- 10. Squeeze the drained vegetables firmly with your hands. Remove as much liquid as possible.
- 11. Place the squeezed vegetables into a clean bowl. Add the chopped thyme.
- 12. Add the almonds and the sunflower seeds to the bowl. Add the eggs.
- 13. Season the vegetable mixture with salt and pepper. Mix all ingredients thoroughly.
- 14. Heat two tablespoons of oil in a non-stick pan. Set the heat to medium.
- 15. Take one tablespoon of the vegetable mixture. Place it into the hot pan.
- 16. Press the portion flat with the back of the spoon. Shape a small fritter.
- 17. Fry the fritter on the first side for about two to three minutes. Fry until golden brown.
- 18. Flip the fritter. Fry the second side for another two to three minutes until golden brown.
- 19. Repeat this process. Fry all remaining vegetable fritters until the mixture is used up.
- 20. Place the finished fritters on kitchen paper. Let the excess oil drain off.
- 21. Preheat the oven to about 50 degrees Celsius. Place the fritters on a baking sheet. Keep them warm there.
- 22. Serve the warm fritters with the feta dip. Enjoy your meal!
