🍽️ Crispy Vegetable Fritters with Salmon and Lemon Yogurt

Ingredients
- onions, yellow 1 pc.
- zucchini 1 pc.
- carrots 2 pcs.
- eggs 1 pc.
- wheat flour, Type 405 2 tbsp
- oregano, dried 0.5 tsp
- salt pinch
- pepper, black ground pinch
- oil 4 tbsp
- organic lemons 1 pc.
- cream yogurt Greek style 150 g
- salmon, smoked 100 g
Instructions
- 1. Cut the onion in half and peel it. Dice the onion very finely.
- 2. Wash the zucchini thoroughly and cut off the ends.
- 3. Peel the carrots and remove the ends.
- 4. Grate the zucchini and the carrots coarsely.
- 5. Place the vegetables and the onion into a bowl.
- 6. Add one egg, flour, and oregano to the bowl.
- 7. Mix all ingredients well together.
- 8. Season the mixture with salt and pepper to taste.
- 9. Heat oil in a frying pan over high heat.
- 10. Take a spoonful of the vegetable mixture.
- 11. Shape it into a small fritter.
- 12. Place the fritter into the hot pan.
- 13. Fry the fritter for about two minutes on the first side until golden brown.
- 14. Turn the fritter and fry it for another two minutes on the other side.
- 15. Wash the lemon under hot water.
- 16. Finely grate about one teaspoon of the lemon zest.
- 17. Cut the lemon in half.
- 18. Squeeze the juice out of the lemon.
- 19. Put yogurt into a cup.
- 20. Add the lemon zest and lemon juice to the yogurt.
- 21. Season the yogurt with salt and pepper.
- 22. Tear the smoked salmon into coarse pieces.
- 23. Spread a dollop of yogurt onto the finished vegetable fritters.
- 24. Place the smoked salmon pieces on top of the yogurt.
- 25. Serve the bites immediately.
