  1. 1. Cut the onion in half and peel it. Dice the onion very finely.
  2. 2. Wash the zucchini thoroughly and cut off the ends.
  3. 3. Peel the carrots and remove the ends.
  4. 4. Grate the zucchini and the carrots coarsely.
  5. 5. Place the vegetables and the onion into a bowl.
  6. 6. Add one egg, flour, and oregano to the bowl.
  7. 7. Mix all ingredients well together.
  8. 8. Season the mixture with salt and pepper to taste.
  9. 9. Heat oil in a frying pan over high heat.
  10. 10. Take a spoonful of the vegetable mixture.
  11. 11. Shape it into a small fritter.
  12. 12. Place the fritter into the hot pan.
  13. 13. Fry the fritter for about two minutes on the first side until golden brown.
  14. 14. Turn the fritter and fry it for another two minutes on the other side.
  15. 15. Wash the lemon under hot water.
  16. 16. Finely grate about one teaspoon of the lemon zest.
  17. 17. Cut the lemon in half.
  18. 18. Squeeze the juice out of the lemon.
  19. 19. Put yogurt into a cup.
  20. 20. Add the lemon zest and lemon juice to the yogurt.
  21. 21. Season the yogurt with salt and pepper.
  22. 22. Tear the smoked salmon into coarse pieces.
  23. 23. Spread a dollop of yogurt onto the finished vegetable fritters.
  24. 24. Place the smoked salmon pieces on top of the yogurt.
  25. 25. Serve the bites immediately.
