  2. 2. Wash the carrot and peel it.
  3. 3. Grate the carrot coarsely.
  4. 4. Cut off the root end of the leek.
  5. 5. Halve the leek lengthwise.
  6. 6. Cut the leek into thin strips.
  7. 7. Dice the leek strips.
  8. 8. Rinse the leek cubes thoroughly in a sieve.
  9. 9. Take a large bowl.
  10. 10. Add the minced meat to the bowl.
  11. 11. Add the grated carrot.
  12. 12. Add the diced leek.
  13. 13. Crack the eggs into the bowl.
  14. 14. Add the breadcrumbs.
  15. 15. Sprinkle the poultry seasoning salt over it.
  16. 16. Salt the mixture to taste.
  17. 17. Pepper the mixture to taste.
  18. 18. Mix all ingredients well together.
  19. 19. Shape the mixture into a loaf.
  20. 20. Aim for a size of about 25 by 10 by 5 centimeters.

  22. 22. Bake the loaf in the oven for about 25 minutes.

  24. 24. Cut the potatoes into cubes.
  25. 25. Put the potato cubes into a pot.
  26. 26. Cover the potatoes with salted water.
  27. 27. Cook the potatoes covered for about 20 minutes over medium heat.

  29. 29. Halve the apple.
  30. 30. Remove the core.
  31. 31. Cut the apple into thin wedges.

  33. 33. Peel the onion halves.
  34. 34. Slice the onions into rings.

  36. 36. Shake the parsley dry.
  37. 37. Pick the parsley leaves off the stems.
  38. 38. Finely chop the parsley leaves.

  40. 40. Heat 2 tablespoons of oil over medium heat.
  41. 41. Fry the onions for about 3 minutes until golden brown.

  50. 50. Add 1 tablespoon of butter to the potatoes.
  51. 51. Add hot vegetable broth.
  52. 52. Add the chopped parsley.
  53. 53. Puree everything until creamy with a hand mixer.
  54. 54. Season the mashed potatoes with salt and pepper to taste.
  55. 55. Take the vegetable loaf out of the oven.
  56. 56. Slice the loaf.
  57. 57. Serve the loaf together with the mashed potatoes.
  58. 58. Pour the apple-onion mixture over it.
