🍽️ Vegetable Loaf with Mashed Potatoes and Braised Apples

Ingredients
- Carrots 1 pc.
- Leek 1 pc.
- Pork mince 600 g
- Eggs 2 pc.
- Breadcrumbs 5 tbsp
- Chicken seasoning salt 1 tsp
- Salt pinch
- Pepper, black ground pinch
- Potatoes, mostly waxy 1 kg
- Apples, red 1 pc.
- Onions, yellow 2 pc.
- Parsley, fresh 20 g
- Oil 2 tbsp
- Butter 2 tbsp
- Vegetable broth 100 ml
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the carrot and peel it.
- 3. Grate the carrot coarsely.
- 4. Cut off the root end of the leek.
- 5. Halve the leek lengthwise.
- 6. Cut the leek into thin strips.
- 7. Dice the leek strips.
- 8. Rinse the leek cubes thoroughly in a sieve.
- 9. Take a large bowl.
- 10. Add the minced meat to the bowl.
- 11. Add the grated carrot.
- 12. Add the diced leek.
- 13. Crack the eggs into the bowl.
- 14. Add the breadcrumbs.
- 15. Sprinkle the poultry seasoning salt over it.
- 16. Salt the mixture to taste.
- 17. Pepper the mixture to taste.
- 18. Mix all ingredients well together.
- 19. Shape the mixture into a loaf.
- 20. Aim for a size of about 25 by 10 by 5 centimeters.
- 21. Place the loaf on a baking sheet.
- 22. Bake the loaf in the oven for about 25 minutes.
- 23. Peel the potatoes.
- 24. Cut the potatoes into cubes.
- 25. Put the potato cubes into a pot.
- 26. Cover the potatoes with salted water.
- 27. Cook the potatoes covered for about 20 minutes over medium heat.
- 28. Wash the apple.
- 29. Halve the apple.
- 30. Remove the core.
- 31. Cut the apple into thin wedges.
- 32. Halve the onions.
- 33. Peel the onion halves.
- 34. Slice the onions into rings.
- 35. Wash the parsley.
- 36. Shake the parsley dry.
- 37. Pick the parsley leaves off the stems.
- 38. Finely chop the parsley leaves.
- 39. Take another pot.
- 40. Heat 2 tablespoons of oil over medium heat.
- 41. Fry the onions for about 3 minutes until golden brown.
- 42. Add the apple.
- 43. Add 1 tablespoon of butter.
- 44. Salt the mixture.
- 45. Pepper the mixture.
- 46. Fry everything for another 3 minutes.
- 47. Deglaze the pan with 6 tablespoons of the potato cooking water.
- 48. Let the mixture simmer covered for approx. 10 minutes over low heat.
- 49. Drain the potatoes using a lid.
- 50. Add 1 tablespoon of butter to the potatoes.
- 51. Add hot vegetable broth.
- 52. Add the chopped parsley.
- 53. Puree everything until creamy with a hand mixer.
- 54. Season the mashed potatoes with salt and pepper to taste.
- 55. Take the vegetable loaf out of the oven.
- 56. Slice the loaf.
- 57. Serve the loaf together with the mashed potatoes.
- 58. Pour the apple-onion mixture over it.
- 59. Enjoy your meal!
