🍽️ Fresh Vegetable Quark Spread

Ingredients
- red bell pepper 1 pc
- celery stalks 80 g
- carrots 1 pc
- kohlrabi 1 pc
- parsley, fresh 20 g
- quark 40% fat in dry matter 250 g
- sour cream 2 tbsp
- tomato paste 1 tsp
- sea salt pinch
- pepper, black ground pinch
- sunflower seeds 2 tbsp
Instructions
- 1. Rinse the bell pepper under running water.
- 2. Remove the stem and seeds from the bell pepper.
- 3. Dice the bell pepper flesh into small cubes.
- 4. Wash the celery stalks thoroughly.
- 5. Dice the celery into fine cubes.
- 6. Peel the carrot.
- 7. Peel the kohlrabi.
- 8. Grate the carrot and kohlrabi coarsely.
- 9. Wash the kohlrabi greens.
- 10. Cut the kohlrabi greens into small pieces.
- 11. Wash the parsley.
- 12. Shake the parsley dry.
- 13. Pluck the parsley leaves from the stems.
- 14. Finely chop the parsley leaves.
- 15. Place the quark in a bowl.
- 16. Add the sour cream to the quark.
- 17. Add the tomato paste.
- 18. Mix the quark, sour cream, and tomato paste well together.
- 19. Season the mixture with salt.
- 20. Season the mixture with pepper.
- 21. Stir the prepared vegetables into the quark mixture.
- 22. Stir in the kohlrabi greens.
- 23. Stir in the chopped parsley.
- 24. Place the sunflower seeds in a pan.
- 25. Heat the pan to medium heat.
- 26. Toast the sunflower seeds for about 2 to 3 minutes without adding extra fat.
- 27. Sprinkle the toasted sunflower seeds over the finished spread.
