🍲 Vegetable Noodle Soup with Sausages

Ingredients
- Cabbage 1 pc.
- Carrots 3 pcs.
- Green beans 250 g
- Spring onions 1 bunch
- Butter 2 tbsp
- Vegetable broth 2 L
- Salt pinch
- Pepper, black ground pinch
- Oregano, dried 0.5 tsp
- Spaghetti 200 g
- Vienna sausages 8 pcs.
Instructions
- 1. Peel the kohlrabi and carrots, trim the ends, and cut them into small pieces or thin slices. Clean the beans, remove the ends, and cut them into approximately 3 cm long pieces. Wash the spring onions, trim the roots, and slice the white and green parts separately into rings.
- 2. Melt the butter in a pot over medium heat and sauté the white part of the spring onions with the prepared vegetables for about 5 minutes. Add the broth, bring to a boil, and season with salt, pepper, and oregano. Cover and let simmer for about 6–8 minutes.
- 3. Add the noodles and cook for another approximately 10 minutes. Cut the sausages into 2 cm pieces and add them in the last 1–2 minutes to heat through. Season the soup to taste and serve sprinkled with the green parts of the spring onions.
