🍲 Vegetable Stew with Green Lentils

Ingredients
- mixed vegetables 2 bunch
- potatoes, mostly waxy 600 g
- onions, yellow 1 pc.
- oil 2 tbsp
- lentils, green 300 g
- salt pinch
- pepper, black ground 1 g
- vegetable broth 1.5 L
- parsley, fresh 25 g
Instructions
- 1. Wash the mixed vegetables thoroughly, peel, and cut into small cubes. Also wash, peel, and cube the potatoes. Halve the onions, peel, and dice finely.
- 2. Heat the oil in a pot over medium heat and sauté the vegetables for about 3 minutes. Rinse the lentils in a sieve under cold water. Then add the lentils, top up with broth, bring to a boil, and then simmer covered for about 20-25 minutes over medium heat.
- 3. Wash the parsley, pat dry, pluck the leaves from the stems, and chop finely. Season the vegetable stew with salt and pepper. Plate and serve decorated with the chopped parsley. Enjoy your meal!
