🍲 Vegetable Stew

Ingredients
- soup vegetables 1 bunch
- potatoes, mostly waxy 500 g
- broccoli 1 pc.
- vegetable broth 1 L
- green beans, frozen 200 g
- salt pinch
- pepper, black ground pinch
Instructions
- 1. Wash the vegetables and potatoes thoroughly. Peel the carrots and celery from the soup vegetables as well as the potatoes. Dice or slice as desired. Cut the leek into rings and separate the broccoli into small florets.
- 2. In a pot, bring the potatoes, carrots, and celery to a boil with the vegetable broth. Cook over medium heat for about 15 minutes.
- 3. Add the broccoli and beans and simmer for another approx. 5 minutes. Add the leek to the stew and season with salt and pepper. Serve the vegetable stew in deep plates. Enjoy! Tip: Older vegetables are particularly suitable for this.
