🍽️ Vegetable Fried Rice with Peanut Sauce and Tofu

Ingredients
- Basmati rice 300 g
- Water 700 ml
- Salt Pinch
- Ginger, fresh 10 g
- Garlic cloves 1 pc.
- Oil 2 tbsp
- Stir-fry vegetables Asian, frozen 200 g
- Pepper, white ground Pinch
- Tofu, plain 400 g
- Coriander, ground Pinch
- Peanuts, roasted and salted 50 g
- Organic limes 1 pc.
- Peanut butter 2 tbsp
- Soy sauce 2 tbsp
- Cilantro, fresh 10 g
- Chili, ground 1 tsp
Instructions
- 1. Put the basmati rice into a pot.
- 2. Cover the rice with salted water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to medium.
- 5. Cover the pot.
- 6. Let the rice cook for about 12 minutes.
- 7. Stir the rice occasionally during the cooking time.
- 8. Peel the ginger.
- 9. Peel the garlic cloves.
- 10. Finely chop the ginger.
- 11. Finely chop the garlic.
- 12. Add 1 tablespoon of oil to a frying pan.
- 13. Heat the oil over medium heat.
- 14. Add the chopped ginger and garlic to the pan.
- 15. Sauté the vegetables for about 5 minutes.
- 16. Add the prepared pan vegetables to the rice.
- 17. Add the cooked rice to the pan.
- 18. Sauté the mixture for another 5 minutes.
- 19. Season the fried rice with salt.
- 20. Season the fried rice with pepper.
- 21. Cut the tofu into cubes.
- 22. Add 1 tablespoon of oil to a clean frying pan.
- 23. Heat the oil over high heat.
- 24. Fry the tofu cubes for about 5 minutes.
- 25. Fry the tofu until golden brown on all sides.
- 26. Season the tofu with salt.
- 27. Season the tofu with pepper.
- 28. Season the tofu with coriander.
- 29. Chop the peanuts.
- 30. Halve the lime.
- 31. Squeeze out 1 tablespoon of lime juice.
- 32. Put the peanut butter into a bowl.
- 33. Add soy sauce to the peanut butter.
- 34. Add the lime juice to the mixture.
- 35. Add 3 tablespoons of water to the mixture.
- 36. Whisk the sauce well.
- 37. Take half of the chopped peanuts.
- 38. Mix the peanuts with the sauce.
- 39. Season the sauce with pepper.
- 40. Wash the coriander.
- 41. Shake the coriander dry.
- 42. Pluck the coriander leaves.
- 43. Chop the coriander leaves.
- 44. Plate the fried rice on four plates.
- 45. Plate the tofu on the plates.
- 46. Drizzle the dish with the peanut sauce.
- 47. Take the remaining chopped peanuts.
- 48. Sprinkle the dish with the remaining nuts.
- 49. Sprinkle the dish with chili.
- 50. Sprinkle the dish with the chopped coriander leaves.
- 51. Serve the dish.
