🍽️ Honey Chicken with Yellow Pepper Pilaf and Cucumber Salad

Ingredients
- chicken breast fillets 600 g
- salt pinch
- pepper, black ground pinch
- honey 2 tsp
- cucumbers 1 pc.
- onions, yellow 1 pc.
- pepper, yellow 2 pc.
- dill, fresh 20 g
- chili pepper mix 0.5 pc.
- organic limes 1 pc.
- oil 3 tbsp
- basmati rice 300 g
- curry powder 1 tsp
- soy sauce 2 tbsp
Instructions
- 1. Rinse the chicken under running water.
- 2. Pat the meat dry with a kitchen towel.
- 3. Season the chicken with salt and pepper.
- 4. Brush the meat with one teaspoon of honey.
- 5. Set the chicken aside.
- 6. Wash the cucumber thoroughly.
- 7. Cut off the ends of the cucumber.
- 8. Halve the cucumber lengthwise.
- 9. Slice the cucumber halves into long strips using a peeler or spiralizer.
- 10. Place the cucumber strips into a bowl.
- 11. Lightly salt the cucumbers.
- 12. Set the cucumbers aside as well.
- 13. Halve the onion.
- 14. Peel the onion.
- 15. Dice the onion finely.
- 16. Rinse the bell pepper.
- 17. Halve the bell pepper.
- 18. Remove the stem and seeds from the bell pepper.
- 19. Cut the bell pepper into small pieces.
- 20. Wash the dill.
- 21. Shake the dill dry.
- 22. Remove the coarse stems from the dill.
- 23. Finely chop the dill.
- 24. Wash the chili pepper.
- 25. Halve the chili pepper.
- 26. Seed the chili pepper.
- 27. Slice the chili pepper into thin strips.
- 28. Halve the lime.
- 29. Squeeze the juice from the lime.
- 30. Heat one tablespoon of oil in a pot over high heat.
- 31. Add the onions, bell pepper, rice, and curry to the pot.
- 32. Roast the ingredients for about two minutes.
- 33. Deglaze the mixture with about 700 milliliters of salted water.
- 34. Cover the pot.
- 35. Simmer the pilaf on low to medium heat for about 15 minutes.
- 36. Heat two tablespoons of oil in a frying pan over high heat.
- 37. Fry the chicken for about three minutes until golden brown.
- 38. Reduce the heat to low.
- 39. Cover the chicken.
- 40. Cook the chicken for another eight minutes.
- 41. Turn the chicken occasionally.
- 42. Squeeze the cucumber strips lightly.
- 43. Drain the released water.
- 44. Mix the cucumbers in the bowl with soy sauce.
- 45. Add one teaspoon of honey to the cucumbers.
- 46. Add the chili pepper strips to the cucumbers.
- 47. Add two tablespoons of lime juice to the cucumbers.
- 48. Season the salad with salt and pepper.
- 49. Season the pilaf with lime juice.
- 50. Season the pilaf with salt and pepper.
- 51. Fold the dill into the pilaf.
- 52. Plate the pilaf, chicken, and salad.
- 53. Serve the dish.
