🍽️ Grilled chicken with colorful tomato salad

Ingredients
- Cherry tomato mix 250 g
- Beef tomatoes 4 pcs
- Vine tomatoes 4 pcs
- Onions, red 1 pc
- Olive oil 7 tbsp
- Balsamic vinegar, light 1 tbsp
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
- Basil, fresh 40 g
- Garlic cloves 1 pc
- Parmesan, grated 2 tbsp
- Chicken breast fillet, marinated 4 pcs
Instructions
- 1. Wash the tomatoes thoroughly.
- 2. Cut the tomatoes into slices or wedges depending on their size.
- 3. Halve the onion and remove the outer skin.
- 4. Cut the onion into thin strips.
- 5. Place the tomatoes and onion strips into a bowl.
- 6. Add 2 tablespoons of olive oil and vinegar.
- 7. Mix everything well together.
- 8. Season the salad with salt, pepper, and sugar.
- 9. Wash the basil.
- 10. Remove the thick stems from the basil.
- 11. Chop the basil roughly.
- 12. Peel the garlic.
- 13. Roughly chop the garlic.
- 14. Place the basil and garlic into a tall container.
- 15. Add the Parmesan cheese.
- 16. Add 5 tablespoons of olive oil.
- 17. Blend the mixture until smooth.
- 18. Season the pesto with salt and pepper.
- 19. Preheat the grill.
- 20. Place the chicken breast fillet on the hot grill.
- 21. Grill the chicken for approx. 5 minutes until golden brown.
- 22. Let the chicken rest briefly.
- 23. Serve the grilled chicken with the colorful tomato salad.
- 24. Add the basil pesto.
