🍽️ Grilled Sea Bass with Cilantro-Lime Relish

Ingredients
- Sea bass, whole 4 pcs
- Coriander, fresh 15 g
- Mint, fresh 15 g
- Organic limes 2 pcs
- Ginger, fresh 10 g
- Olives, green 20 g
- Shallots 2 pcs
- Sugar pinch
- Chili, ground 0.25 tsp
- Oil 7 tbsp
Instructions
- 1. Ideally, let the sea bass thaw overnight in the refrigerator.
- 2. Thoroughly wash the cilantro and mint.
- 3. Remove the thick stems from the mint.
- 4. Rinse the limes.
- 5. Cut one lime in half and squeeze out the juice.
- 6. Slice the other lime into thin rounds.
- 7. Peel the ginger.
- 8. Roughly chop the ginger.
- 9. Roughly chop the olives.
- 10. Cut the shallots in half.
- 11. Peel the shallots.
- 12. Cut the shallots into coarse cubes.
- 13. Place half of the herbs into a tall container.
- 14. Add the lime juice.
- 15. Add the chopped ginger.
- 16. Add the olives.
- 17. Add the diced shallots.
- 18. Add the sugar.
- 19. Add the chili powder.
- 20. Add 5 tablespoons of oil.
- 21. Thoroughly puree the ingredients for the relish.
- 22. Preheat the grill.
- 23. Rinse the sea bass.
- 24. Pat the sea bass dry with kitchen paper.
- 25. Score the skin of the sea bass at approximately 1 cm intervals.
- 26. Season the inside of the sea bass thoroughly with salt.
- 27. Season the outside of the sea bass thoroughly with salt.
- 28. Stuff the sea bass with the remaining herbs.
- 29. Stuff the sea bass with the lime slices.
- 30. Place the sea bass in a grill basket.
- 31. Alternatively, tie the sea bass securely with kitchen twine.
- 32. Rub the sea bass with the remaining oil.
- 33. Place the sea bass on the hot grill.
- 34. Grill the sea bass on the first side for about 5 minutes.
- 35. Grill the sea bass on the second side for about 5 minutes.
- 36. Cook the fish until it is golden brown and crispy.
- 37. Check if the fish is done by gently pulling the meat apart with a fork.
- 38. Ensure that the meat no longer appears translucent.
- 39. Serve the grilled sea bass with the cilantro-lime relish.
