🍽️ Grilled Pork Neck with Potatoes and Quark

Ingredients
- Pork neck steaks 600 g
- Thyme, fresh 5 g
- Garlic cloves 1 pc.
- Oil 6 tbsp
- Salt pinch
- Pepper, black ground 1 tsp
- Potatoes, mostly waxy 1 kg
- Olives, green 50 g
- Tomatoes, dried 50 g
- Basil, fresh 20 g
- Quark 40% fat in dry matter 200 g
- sour cream 200 g
- Cayenne pepper pinch
- Sugar pinch
Instructions
- 1. Preheat the oven to 200 degrees Celsius with fan.
- 2. Rinse the meat steaks and pat them dry with kitchen paper.
- 3. Wash the thyme and dry it thoroughly.
- 4. Strip the thyme leaves from the stems and chop them finely.
- 5. Peel the garlic and chop it finely as well.
- 6. Massage the meat with two tablespoons of oil, the herbs, the garlic, salt, and pepper.
- 7. Set the meat aside to rest.
- 8. Wash the potatoes thoroughly and halve them.
- 9. Line a baking tray with baking paper.
- 10. Place the potato halves on the tray.
- 11. Add two tablespoons of oil, salt, and pepper, and mix everything.
- 12. Arrange the potatoes with the cut side facing up.
- 13. Bake the potatoes in the oven for 20 to 25 minutes until golden brown.
- 14. Drain the olives.
- 15. Slice the olives into thin rings.
- 16. Dice the dried tomatoes finely.
- 17. Wash the basil and shake it dry.
- 18. Pluck the basil leaves and chop them coarsely.
- 19. Mix quark and sour cream in a bowl.
- 20. Add the tomatoes, olives, and basil to the quark mixture.
- 21. Stir everything well.
- 22. Season the mixture with salt, pepper, cayenne pepper, and sugar.
- 23. Heat two tablespoons of oil in a pan over high heat.
- 24. Sear the pork neck on all sides for 3 to 4 minutes.
- 25. Turn the meat occasionally.
- 26. Make sure the garlic does not burn.
- 27. Take the potatoes out of the oven.
- 28. Spread the quark mixture with tomatoes and olives over the potatoes.
- 29. Plate the pork neck steaks together with the potatoes and quark.
- 30. Serve the dish and enjoy your meal.
