  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Rinse the meat steaks and pat them dry with kitchen paper.
  3. 3. Wash the thyme and dry it thoroughly.
  4. 4. Strip the thyme leaves from the stems and chop them finely.
  5. 5. Peel the garlic and chop it finely as well.
  6. 6. Massage the meat with two tablespoons of oil, the herbs, the garlic, salt, and pepper.
  7. 7. Set the meat aside to rest.
  8. 8. Wash the potatoes thoroughly and halve them.
  9. 9. Line a baking tray with baking paper.
  10. 10. Place the potato halves on the tray.
  11. 11. Add two tablespoons of oil, salt, and pepper, and mix everything.
  12. 12. Arrange the potatoes with the cut side facing up.
  13. 13. Bake the potatoes in the oven for 20 to 25 minutes until golden brown.
  14. 14. Drain the olives.
  15. 15. Slice the olives into thin rings.
  16. 16. Dice the dried tomatoes finely.
  17. 17. Wash the basil and shake it dry.
  18. 18. Pluck the basil leaves and chop them coarsely.
  19. 19. Mix quark and sour cream in a bowl.
  20. 20. Add the tomatoes, olives, and basil to the quark mixture.
  21. 21. Stir everything well.
  22. 22. Season the mixture with salt, pepper, cayenne pepper, and sugar.
  23. 23. Heat two tablespoons of oil in a pan over high heat.
  24. 24. Sear the pork neck on all sides for 3 to 4 minutes.
  25. 25. Turn the meat occasionally.
  26. 26. Make sure the garlic does not burn.
  27. 27. Take the potatoes out of the oven.
  28. 28. Spread the quark mixture with tomatoes and olives over the potatoes.
  29. 29. Plate the pork neck steaks together with the potatoes and quark.
