🍽️ Grilled Pulled Salmon with Mushrooms

Ingredients
- Salmon fillet, frozen 600 g
- Garlic cloves 1 pc.
- Organic limes 1 pc.
- Soy sauce 6 tbsp
- Oil 3 tbsp
- Brown sugar 1 tbsp
- Cayenne pepper 0.5 tsp
- Tabasco 1 ml
- Mushrooms, brown 350 g
- Cilantro, fresh 10 g
- Salt pinch
Instructions
- 1. Salmon should ideally be thawed overnight in the refrigerator. Rinse the salmon and pat dry with a kitchen towel. Peel the garlic and chop finely. Wash the lime thoroughly under hot water, grate about 1 tsp of zest, halve it, and squeeze out the juice.
- 2. In a bowl, mix 4 tbsp soy sauce with 2 tbsp oil, the garlic, brown sugar, 1 tbsp lime juice, the lime zest, cayenne pepper, and a few dashes of Tabasco. Let the salmon marinate in this mixture for at least 15 minutes.
- 3. Clean the mushrooms if necessary with a kitchen towel and quarter them. Rinse the cilantro, shake off excess water, and remove the thick stems. Roughly chop the cilantro.
- 4. Heat 1 tbsp oil in a pan over high heat and sear the mushrooms for about 5 minutes. Deglaze with 2 tbsp soy sauce and season with salt and cayenne pepper.
- 5. Preheat the grill. Remove the salmon from the marinade and grill it on the hot grill for 5–10 minutes, depending on thickness, until it has a slightly brown crust. Brush some of the marinade onto it in between. Warm the mushrooms on the grill for about 2 minutes as well.
- 6. Place the salmon on a plate and shred it with two forks, then drizzle with the remaining marinade. Add the mushrooms and serve the grilled pulled salmon garnished with cilantro. Enjoy! Tip: This goes well with [recipeLink=144653].
