  3. 3. Thoroughly wash the asparagus under running water.
  4. 4. Peel the bottom third of the asparagus stalks.
  5. 5. Remove the woody ends of the stalks.
  6. 6. Rinse the lemon under hot water.
  7. 7. Finely grate 1 teaspoon of lemon zest.
  8. 8. Squeeze the juice from the lemon.
  9. 9. Mix the oil with the lemon zest in a bowl.
  10. 10. Season the oil-lemon mixture with salt and pepper.
  11. 11. Brush the asparagus thinly with this mixture.
  12. 12. Cook the asparagus on the grill for about 8 to 10 minutes.
  13. 13. Turn the asparagus regularly during the grilling time.
  14. 14. Wash the arugula thoroughly.
  15. 15. Spin the arugula dry well.
  16. 16. Tear the arugula into bite-sized pieces.
