🍽️ Grilled Green Asparagus

Ingredients
- Pine nuts 30 g
- green asparagus 2 bunch
- lemons 1 pc
- olive oil 6 tbsp
- arugula 150 g
- salt pinch
- pepper, black ground pinch
- Parmesan 60 g
Instructions
- 1. Heat a pan over medium heat.
- 2. Roast the pine nuts in the pan for about 2 to 3 minutes without adding fat.
- 3. Thoroughly wash the asparagus under running water.
- 4. Peel the bottom third of the asparagus stalks.
- 5. Remove the woody ends of the stalks.
- 6. Rinse the lemon under hot water.
- 7. Finely grate 1 teaspoon of lemon zest.
- 8. Squeeze the juice from the lemon.
- 9. Mix the oil with the lemon zest in a bowl.
- 10. Season the oil-lemon mixture with salt and pepper.
- 11. Brush the asparagus thinly with this mixture.
- 12. Cook the asparagus on the grill for about 8 to 10 minutes.
- 13. Turn the asparagus regularly during the grilling time.
- 14. Wash the arugula thoroughly.
- 15. Spin the arugula dry well.
- 16. Tear the arugula into bite-sized pieces.
- 17. Arrange the arugula on a serving platter.
- 18. Slice the Parmesan into very thin shavings using a vegetable peeler.
- 19. Place the grilled asparagus on top of the arugula.
- 20. Drizzle the remaining lemon oil over the asparagus.
- 21. Season the dish finally with salt and pepper.
- 22. Sprinkle the roasted pine nuts over the asparagus.
- 23. Distribute the Parmesan shavings over the asparagus.
- 24. Serve the dish immediately.
