🍽️ Teriyaki Mushroom Skewers with Pak Choi and Peanut Dip

Ingredients
- mushrooms, brown 800 g
- ginger, fresh 10 g
- garlic cloves 2 pcs.
- Pak Choi 400 g
- parsley, fresh 10 g
- soy sauce 12 tbsp
- sugar beet syrup 2 tbsp
- oil 2 tbsp
- bananas 2 pcs.
- organic limes 1 pc.
- peanuts 75 g
- water 75 ml
Instructions
- 1. Preheat your grill.
- 2. Clean the mushrooms gently with a kitchen towel and remove the stems.
- 3. Peel the ginger and the garlic.
- 4. Finely chop the ginger and the garlic.
- 5. Wash the Pak Choi.
- 6. Cut the Pak Choi in half or quarters depending on the size.
- 7. Wash the parsley.
- 8. Shake the parsley dry.
- 9. Pick the parsley leaves off the stems.
- 10. Chop the parsley leaves.
- 11. Put 8 tablespoons of soy sauce into a bowl.
- 12. Add beet syrup into the bowl.
- 13. Add the chopped garlic into the bowl.
- 14. Add the chopped ginger into the bowl.
- 15. Stir the ingredients together to form a teriyaki sauce.
- 16. Peel the bananas.
- 17. Slice the bananas.
- 18. Halve the lime.
- 19. Squeeze the juice of the lime.
- 20. Put the banana slices into a measuring cup.
- 21. Add the peanuts into the measuring cup.
- 22. Add water into the measuring cup.
- 23. Add 1 tablespoon of soy sauce into the measuring cup.
- 24. Add 1 tablespoon of lime juice into the measuring cup.
- 25. Blend the mixture in the measuring cup finely with a hand blender.
- 26. Place the mushrooms on an aluminum grilling tray.
- 27. Place the skewers on the hot grill.
- 28. Grill the skewers for approx. 5 to 8 minutes all around.
- 29. Brush the skewers with oil several times during grilling.
- 30. Add the Pak Choi to the grill.
- 31. Grill the Pak Choi for another approx. 4 minutes.
- 32. Deglaze the skewers with the teriyaki sauce.
- 33. Let the sauce reduce for approx. 2 minutes.
- 34. Brush the skewers with the marinade again if necessary.
- 35. Arrange the grill skewers on plates.
- 36. Arrange the Pak Choi on the plates.
- 37. Add the peanut sauce.
- 38. Sprinkle the dish with the chopped parsley.
- 39. Serve the dish.
- 40. Heat 1 tablespoon of oil in a pan on medium to high heat.
- 41. Cook the skewers in the pan for approx. 9 to 10 minutes.
