🍽️ Gegrilled Sweet Potato with Avocado Dip

Ingredients
- Sweet potatoes 6 pcs
- Parsley, fresh 25 g
- Avocado 1 pcs
- Organic limes 1 pcs
- Soy yogurt 200 g
- Salt pinch
- Pepper, black ground pinch
- Olive oil 2 tbsp
Instructions
- 1. Wash the sweet potatoes thoroughly.
- 2. Place them in a pot and cover them completely with water.
- 3. Bring the water to a boil.
- 4. Reduce the heat to medium.
- 5. Cook the sweet potatoes for about 15 minutes until they are tender but still firm.
- 6. Wash the parsley thoroughly.
- 7. Shake the parsley dry.
- 8. Remove the coarse stems from the parsley.
- 9. Chop the parsley coarsely.
- 10. Halve the avocado.
- 11. Remove the pit of the avocado.
- 12. Carefully separate the avocado flesh from the skin using a spoon.
- 13. Halve the lime.
- 14. Squeeze the juice from the lime.
- 15. Place the avocado in a tall container.
- 16. Add one tablespoon of lime juice to the avocado.
- 17. Puree the avocado with the lime juice until smooth.
- 18. Add the soy yogurt to the avocado mixture.
- 19. Add the chopped parsley.
- 20. Mix all ingredients well together.
- 21. Season the dip with salt and pepper to taste.
- 22. Drain the cooked sweet potatoes.
- 23. Let the sweet potatoes cool down briefly.
- 24. Slice the sweet potatoes lengthwise into slices about 2 centimeters thick.
- 25. Brush the slices with two tablespoons of olive oil.
- 26. Preheat the grill.
- 27. Place the sweet potato slices on the hot grill.
- 28. Grill the sweet potatoes for about 4 minutes on the first side until crispy.
- 29. Turn the sweet potatoes and grill them for another 4 minutes on the other side.
- 30. Season the grilled sweet potatoes with salt and pepper.
- 31. Serve the sweet potatoes with the avocado dip.
