  1. 1. Wash the sweet potatoes thoroughly.
  2. 2. Place them in a pot and cover them completely with water.
  3. 3. Bring the water to a boil.
  4. 4. Reduce the heat to medium.
  5. 5. Cook the sweet potatoes for about 15 minutes until they are tender but still firm.
  6. 6. Wash the parsley thoroughly.
  7. 7. Shake the parsley dry.
  8. 8. Remove the coarse stems from the parsley.
  9. 9. Chop the parsley coarsely.
  10. 10. Halve the avocado.
  11. 11. Remove the pit of the avocado.
  12. 12. Carefully separate the avocado flesh from the skin using a spoon.
  13. 13. Halve the lime.
  14. 14. Squeeze the juice from the lime.
  15. 15. Place the avocado in a tall container.
  16. 16. Add one tablespoon of lime juice to the avocado.
  17. 17. Puree the avocado with the lime juice until smooth.
  18. 18. Add the soy yogurt to the avocado mixture.
  19. 19. Add the chopped parsley.
  20. 20. Mix all ingredients well together.
  21. 21. Season the dip with salt and pepper to taste.
  22. 22. Drain the cooked sweet potatoes.
  23. 23. Let the sweet potatoes cool down briefly.
  24. 24. Slice the sweet potatoes lengthwise into slices about 2 centimeters thick.
  25. 25. Brush the slices with two tablespoons of olive oil.
  26. 26. Preheat the grill.
  27. 27. Place the sweet potato slices on the hot grill.
  28. 28. Grill the sweet potatoes for about 4 minutes on the first side until crispy.
  29. 29. Turn the sweet potatoes and grill them for another 4 minutes on the other side.
  30. 30. Season the grilled sweet potatoes with salt and pepper.
  31. 31. Serve the sweet potatoes with the avocado dip.
