🍽️ Grilled Rump Steaks with Fresh Chimichurri Sauce

Ingredients
- Beef rump steaks 600 g
- Garlic cloves 2 pcs
- Onions, red 2 pcs
- Organic limes 1 pc
- chili pepper mix 1 pc
- Thyme, fresh 5 g
- Parsley, fresh 40 g
- Oregano, dried 2 tsp
- Sea salt pinch
- Olive oil 100 ml
- Balsamic vinegar, light 2 tbsp
- Pepper, black ground pinch
Instructions
- 1. Take the rump steak out of the fridge and let it sit on the counter until it reaches room temperature.
- 2. Peel the garlic cloves and the onion and cut them into very small cubes.
- 3. Wash the lime under hot water.
- 4. Grate about one teaspoon of the green lime zest.
- 5. Cut the lime in half and squeeze out the juice.
- 6. Wash the chili peppers and remove the green stem.
- 7. Finely chop the chili peppers, including the seeds.
- 8. Wash the fresh herbs and shake them dry.
- 9. Remove the thick stems from the herbs.
- 10. Chop the herbs finely.
- 11. Put the chopped garlic, onion cubes, lime zest, one tablespoon of lime juice, chopped chili, oregano, and salt into a mortar.
- 12. Pound the ingredients in the mortar briefly until they are finely minced.
- 13. Add the remaining herbs, olive oil, and vinegar to the mortar.
- 14. Grind everything together until you have a creamy sauce with a pesto-like consistency.
- 15. Finally season the chimichurri sauce with black pepper.
- 16. Preheat your grill.
- 17. Lightly score the fat edge of the rump steak in 3 to 4 evenly spaced cuts.
- 18. Make sure not to cut deep into the meat.
- 19. Season the steaks generously with salt on both sides.
- 20. Place the steaks directly over the heat source and sear them all around.
- 21. Cook the steaks for about 4 to 5 minutes.
- 22. Move the steaks to an area with indirect heat to finish cooking.
- 23. Cook the steaks to your desired doneness, such as medium or well-done.
- 24. Remove the steaks from the grill.
- 25. Cover the steaks and let them rest for a few minutes.
- 26. Slice the grilled rump steaks into thin slices.
- 27. Season the slices again with salt and pepper.
- 28. Serve the steaks together with the chimichurri sauce.
