  1. 1. Take the rump steak out of the fridge and let it sit on the counter until it reaches room temperature.
  2. 2. Peel the garlic cloves and the onion and cut them into very small cubes.
  3. 3. Wash the lime under hot water.
  4. 4. Grate about one teaspoon of the green lime zest.
  5. 5. Cut the lime in half and squeeze out the juice.
  6. 6. Wash the chili peppers and remove the green stem.
  7. 7. Finely chop the chili peppers, including the seeds.
  8. 8. Wash the fresh herbs and shake them dry.
  9. 9. Remove the thick stems from the herbs.
  10. 10. Chop the herbs finely.
  11. 11. Put the chopped garlic, onion cubes, lime zest, one tablespoon of lime juice, chopped chili, oregano, and salt into a mortar.
  12. 12. Pound the ingredients in the mortar briefly until they are finely minced.
  13. 13. Add the remaining herbs, olive oil, and vinegar to the mortar.
  14. 14. Grind everything together until you have a creamy sauce with a pesto-like consistency.
  15. 15. Finally season the chimichurri sauce with black pepper.
  16. 16. Preheat your grill.
  17. 17. Lightly score the fat edge of the rump steak in 3 to 4 evenly spaced cuts.
  18. 18. Make sure not to cut deep into the meat.
  19. 19. Season the steaks generously with salt on both sides.
  20. 20. Place the steaks directly over the heat source and sear them all around.
  21. 21. Cook the steaks for about 4 to 5 minutes.
  22. 22. Move the steaks to an area with indirect heat to finish cooking.
  23. 23. Cook the steaks to your desired doneness, such as medium or well-done.
  24. 24. Remove the steaks from the grill.
  25. 25. Cover the steaks and let them rest for a few minutes.
  26. 26. Slice the grilled rump steaks into thin slices.
  27. 27. Season the slices again with salt and pepper.
  28. 28. Serve the steaks together with the chimichurri sauce.
