🍽️ Grilled Turkey Skewers with Cucumber-Almond Couscous

Ingredients
- Pork breast fillet 600 g
- Organic limes 1 pc.
- Yogurt, plain 150 g
- Sweet paprika 1 tsp
- Chili, ground pinch
- Cumin pinch
- Salt pinch
- Vegetable broth 300 ml
- Couscous 200 g
- Butter 1 tbsp
- Oil 1 tbsp
- Almonds, whole 4 tbsp
- Sugar pinch
- Cucumbers 1 pc.
- Dill, fresh 20 g
Instructions
- 1. Place the wooden skewers in a container of water and let them soak.
- 2. Rinse the turkey fillets under running water.
- 3. Pat the meat dry with a kitchen towel.
- 4. Cut the turkey fillets into coarse cubes.
- 5. Rinse the lime under running water.
- 6. Cut the lime in half.
- 7. Squeeze the juice from the lime.
- 8. Put two tablespoons of yogurt into a bowl.
- 9. Add paprika powder to the yogurt mixture.
- 10. Add chili powder to the yogurt mixture.
- 11. Add ground cumin to the yogurt mixture.
- 12. Season the marinade with salt.
- 13. Add one teaspoon of lime juice to the marinade.
- 14. Mix all the marinade ingredients well together.
- 15. Add the meat cubes to the marinade.
- 16. Toss the meat so that it is completely covered with the marinade.
- 17. Let the meat marinate for about 15 to 20 minutes.
- 18. Put vegetable broth into a pot.
- 19. Bring the vegetable broth to a boil.
- 20. Put couscous into a separate bowl.
- 21. Pour the hot broth over the couscous.
- 22. Cover the bowl with cling film.
- 23. Let the couscous swell for about 10 minutes.
- 24. Fluff up the couscous with a fork.
- 25. Stir butter into the couscous.
- 26. Heat oil in a frying pan over medium heat.
- 27. Chop the almonds coarsely.
- 28. Put the almonds into the hot pan.
- 29. Season the almonds with a little salt.
- 30. Roast the almonds for about 2 minutes while stirring constantly.
- 31. Remove the pan from the heat as soon as the almonds are golden brown.
- 32. Add the sugar to the pan with the almonds.
- 33. Let the caramelized almonds drain on kitchen paper.
- 34. Peel the cucumber.
- 35. Cut the cucumber lengthwise into four parts.
- 36. Remove the seeds from the cucumber pieces.
- 37. Cut the cucumber pieces diagonally into bite-sized pieces.
- 38. Rinse the dill under running water.
- 39. Dry the dill.
- 40. Remove the coarse stems from the dill.
- 41. Chop the dill coarsely.
- 42. Add the cut cucumber pieces to the couscous.
- 43. Add the chopped dill to the couscous.
- 44. Add the roasted almonds to the couscous.
- 45. Season the couscous with lime juice.
- 46. Season the couscous with salt.
- 47. Season the couscous with pepper.
- 48. Put the remaining yogurt into a bowl.
- 49. Add some lime juice to the yogurt bowl.
- 50. Season the yogurt with salt.
- 51. Season the yogurt with pepper.
- 52. Preheat the grill.
- 53. Thread the marinated meat pieces onto the soaked skewers.
- 54. Place the skewers on the grill.
- 55. Grill the skewers all around for about 10 to 15 minutes.
- 56. Grill the skewers until they are golden brown.
- 57. Remove the skewers from the grill.
- 58. Put the couscous on the plates.
- 59. Place the turkey skewers next to the couscous on the plates.
- 60. Add the yogurt to the skewers on the plates.
- 61. Serve the dish.
