  1. 1. Cut the vanilla pod lengthwise and scrape out the seeds with a knife. In a pot, bring the peach nectar to a boil over high heat, add the vanilla seeds and sugar, and let it reduce for about 2 minutes.
  2. 2. Wash the nectarines thoroughly, halve them, remove the pit, and cut the halves into quarters. Wash the mint, pat dry, pluck the leaves from the stems, and chop finely. Put the butter cookies in a freezer bag and crush them with a ladle.
  3. 3. Preheat the grill. Brush the nectarines with the peach nectar and grill for about 2 minutes on each side. Place the nectarines on a plate and drizzle with the remaining nectar. Sprinkle the crumbled cookies and vanilla seeds over the nectarines and garnish with fresh mint.
