  1. 1. Peel the onion and the garlic clove.
  2. 2. Rinse the neck steaks under running water.
  3. 3. Pat the steaks dry with a kitchen towel.
  4. 4. Place the peeled onion and garlic into the mixing container.
  5. 5. Chop the onion and garlic for 4 seconds on speed 8.
  6. 6. Add mustard, thyme, cane sugar, beer, 1 teaspoon of salt, and some pepper to the container.
  7. 7. Mix the marinade ingredients for 20 seconds on speed 3.
  8. 8. Pour the finished marinade over the neck steaks.
  9. 9. Let the steaks marinate in the refrigerator for at least 1 hour.
  10. 10. For a more intense flavor, marinate the steaks overnight.
  11. 11. Preheat the grill.
  12. 12. Take the neck steaks out of the marinade.
  13. 13. Let the excess marinade drip off the steaks.
  14. 14. Sear the steaks for about 2 to 3 minutes on each side.
  15. 15. Serve the grilled neck steaks immediately.
