  1. 1. Ideally, thaw the salmon overnight in the refrigerator.
  2. 2. Rinse the fish under cold water and pat it completely dry with a kitchen towel.
  3. 3. Cut the salmon into four equal pieces.
  4. 4. Wash the lemon thoroughly and slice it into thin rounds.
  5. 5. Wash the tomatoes and cut each one in half.
  6. 6. Clean the spring onions, shake off excess water, and trim off the root ends.
  7. 7. Cut the spring onions into rough chunks.
  8. 8. Peel the garlic and chop it finely.
  9. 9. Tear off four pieces of aluminum foil and lightly brush them with olive oil.
  10. 10. Evenly distribute the chopped garlic over the foil pieces.
  11. 11. Place the lemon slices on top of the garlic.
  12. 12. Place one piece of salmon on the lemon slices.
  13. 13. Season the salmon with salt and pepper.
  14. 14. Evenly distribute the shrimp, spring onions, and tomatoes on the salmon.
  15. 15. Fold the aluminum foil into sealed packets.
  16. 16. Place the packets on the hot grill for about 10 to 12 minutes.
  17. 17. Toast the herb baguette on the grill until golden brown.
  18. 18. Serve the grilled salmon packets together with the baguette.
