  1. 1. Peel the garlic and chop it finely.
  2. 2. Cut the onion in half, peel it, and dice it finely.
  3. 3. Wash the parsley and mint, dry them, and pick the leaves off the stems.
  4. 4. Chop the herbs finely as well.
  5. 5. Drain the chickpeas and rinse them thoroughly in a colander.
  6. 6. Cut the lemon in half and squeeze out the juice.
  7. 7. Place the minced meat in a bowl.
  8. 8. Add the diced onion, half of the garlic, and the chopped herbs.
  9. 9. Season the mixture with salt, paprika powder, cinnamon, and cumin.
  10. 10. Knead everything well until it forms a uniform mass.
  11. 11. Form small balls from the meat mixture.
  12. 12. Place the chickpeas, lemon juice, remaining garlic, sesame seeds, and 3 tablespoons of cold water in a tall container.
  13. 13. Blend the ingredients very finely until a smooth hummus is formed.
  14. 14. Season the hummus with salt and cumin to taste.
  15. 15. Transfer the hummus into a bowl.
  16. 16. Heat the olive oil in a frying pan over medium heat.
  17. 17. Toast the pine nuts in the oil for about 2 minutes.
  18. 18. Season the pine nuts with salt.
  19. 19. Remove the pan from the heat.
  20. 20. Add the remaining herbs to the hot oil.
  21. 21. Preheat the grill.
  22. 22. Roast the meatballs on the grill for about 4 minutes.
  23. 23. Arrange the grilled meatballs on top of the hummus.
  24. 24. Drizzle the pine nuts and herb oil over the top.
  25. 25. Serve the dish and enjoy your meal.
