  2. 2. Cut off the tough root ends of the spring onions.
  3. 3. Slice the spring onions into thin rings.
  4. 4. Wash the lemon thoroughly.
  5. 5. Grate about one teaspoon of the lemon zest finely.
  6. 6. Place the spring onion rings into a bowl.
  7. 7. Add the grated lemon zest to the bowl.
  8. 8. Add the goat cream cheese to the bowl.
  9. 9. Mix all ingredients in the bowl thoroughly.
  10. 10. Season the mixture with salt and pepper to taste.
  11. 11. Rinse the chicken breast briefly under cold water.
  12. 12. Pat the chicken breast dry with a kitchen towel.
  13. 13. Cut a pocket into the side of the chicken breast.
  14. 14. Fill the pocket with about one to two teaspoons of the goat cheese cream.
  15. 15. Lightly oil the grill grate.
  16. 16. Place the stuffed chicken breast on the grill grate.
  17. 17. Grill the chicken breast for about six minutes on the first side.
  18. 18. Turn the chicken breast and grill for another six minutes on the other side.
  19. 19. Plate the finished chicken breast with the goat cheese filling.
