  1. 1. Preheat the oven to 190 °C (convection). Wash the zucchini, trim the ends, and halve them lengthwise. Use a teaspoon to scoop out the soft inside, leaving a border of about 1 cm. Salt the zucchini halves.
  2. 2. Halve and peel the onions, then chop them finely. In a bowl, mix the ground meat with the onion, mustard, tomato paste, and the herbs of Provence. Season the mixture with salt and pepper.
  3. 3. Evenly fill the meat mixture into the zucchini halves. Place the stuffed zucchini on a baking sheet and bake them in the oven for about 20 minutes.
  4. 4. Peel and chop the garlic. Heat oil in a pan over high heat and sauté the garlic for about 1 minute. Deglaze with the chopped tomatoes and let the sauce simmer on low heat for about 3 minutes. Season with salt, pepper, sugar, and the herbs of Provence.
