  1. 1. Preheat the oven to 180 °C (convection). Wash the zucchini, halve them lengthwise, and scoop out the inside with a spoon, leaving a rim of about 1 cm. Salt the zucchini halves and set them aside.
  2. 2. Roughly chop the zucchini into cubes. Wash the peppers, halve them, remove the stem and seeds, and chop them roughly. Halve the onion, peel it, and chop it finely. Wash the tomatoes and cut them into cubes. Dice the ham as well.
  3. 3. Heat oil in a pan over medium heat and sauté the zucchini with peppers and onion for about 3 minutes. Add the tomatoes and remove the pan from the heat. Mix the vegetables with fresh cheese and ham in the pan and season with salt and pepper.
  4. 4. Place the zucchini halves in a baking dish and fill them with the fresh cheese-vegetable mixture. Bake them in the oven for about 15 minutes.
  5. 5. Meanwhile, bring about 700 ml of salted water to a boil in a pot and add the rice. Cover the pot and let the rice cook over medium heat for about 10 minutes. Remove the stuffed zucchini from the oven and serve them with the rice. Enjoy your meal!
