🍽️ Crispy dumplings filled with cod and broccoli

Ingredients
- Cod, frozen 300 g
- Wheat flour, Type 405 250 g
- Quark 40 % fat in trace 125 g
- Salt pinch
- Oil 4 tbsp
- Eggs 2 pcs.
- Onions, yellow 1 pc.
- Pepper, black ground pinch
- Broccoli 100 g
- Potatoes, mostly waxy 200 g
- Lemons 1 pc.
- Sour cream 1 tbsp
- Herbs of Provence, dried 1 tsp
- Milk 1 tbsp
Instructions
- 1. Thaw the cod overnight in the refrigerator.
- 2. Mix flour, quark (a type of fresh cheese), one level teaspoon of salt, two tablespoons of oil, and one egg in a bowl to form a smooth dough.
- 3. Cover the dough and let it rest for about one hour.
- 4. Halve and peel the onions, then dice them finely.
- 5. Rinse the cod fillets and pat them dry with a kitchen towel.
- 6. Season the fish with salt and pepper.
- 7. Heat two tablespoons of oil in a frying pan over medium to high heat.
- 8. Fry the cod fillets for about two minutes on each side.
- 9. Add the diced onions and fry them together for the last two minutes.
- 10. Remove the fish and onions from the pan and let them cool down.
- 11. Shred the cooled fish into small pieces.
- 12. Wash the broccoli and cut it into small florets.
- 13. Peel the potatoes, wash them, and cut them into cubes.
- 14. Place the potato cubes in a pot with salted water and bring to a boil.
- 15. Cook the potatoes covered over medium heat for about 25 minutes until tender.
- 16. Add the broccoli to the potatoes during the last eight minutes of cooking.
- 17. Drain the vegetables and let them steam dry for a moment.
- 18. Halve a lemon and squeeze out the juice.
- 19. Return the drained vegetables to the pot.
- 20. Mash the vegetables finely with sour cream (a mixture of sour cream and quark).
- 21. Fold in the shredded fish and onions.
- 22. Add herbs de Provence (a French herb blend) and the remaining egg.
- 23. Mix everything well and season to taste with salt, pepper, and lemon juice.
- 24. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 25. Roll out the dough thinly on a floured surface.
- 26. Cut out 12 circles with a diameter of about 12 centimeters.
- 27. Distribute the filling onto the dough circles.
- 28. Fold the dough over the filling and press the edges firmly together with a fork.
- 29. Place the dumplings on a baking sheet lined with baking paper.
- 30. Brush the dumplings thinly with milk.
- 31. Bake them in the oven for about 20 minutes until golden brown.
- 32. Serve the dumplings hot or cold.
