  1. 1. Thaw the cod overnight in the refrigerator.
  2. 2. Mix flour, quark (a type of fresh cheese), one level teaspoon of salt, two tablespoons of oil, and one egg in a bowl to form a smooth dough.
  3. 3. Cover the dough and let it rest for about one hour.
  4. 4. Halve and peel the onions, then dice them finely.
  5. 5. Rinse the cod fillets and pat them dry with a kitchen towel.
  6. 6. Season the fish with salt and pepper.
  7. 7. Heat two tablespoons of oil in a frying pan over medium to high heat.
  8. 8. Fry the cod fillets for about two minutes on each side.
  9. 9. Add the diced onions and fry them together for the last two minutes.
  10. 10. Remove the fish and onions from the pan and let them cool down.
  11. 11. Shred the cooled fish into small pieces.
  12. 12. Wash the broccoli and cut it into small florets.
  13. 13. Peel the potatoes, wash them, and cut them into cubes.
  14. 14. Place the potato cubes in a pot with salted water and bring to a boil.
  15. 15. Cook the potatoes covered over medium heat for about 25 minutes until tender.
  16. 16. Add the broccoli to the potatoes during the last eight minutes of cooking.
  17. 17. Drain the vegetables and let them steam dry for a moment.
  18. 18. Halve a lemon and squeeze out the juice.
  19. 19. Return the drained vegetables to the pot.
  20. 20. Mash the vegetables finely with sour cream (a mixture of sour cream and quark).
  21. 21. Fold in the shredded fish and onions.
  22. 22. Add herbs de Provence (a French herb blend) and the remaining egg.
  23. 23. Mix everything well and season to taste with salt, pepper, and lemon juice.
  24. 24. Preheat the oven to 200 degrees Celsius with top and bottom heat.
  25. 25. Roll out the dough thinly on a floured surface.
  26. 26. Cut out 12 circles with a diameter of about 12 centimeters.
  27. 27. Distribute the filling onto the dough circles.
  28. 28. Fold the dough over the filling and press the edges firmly together with a fork.
  29. 29. Place the dumplings on a baking sheet lined with baking paper.
  30. 30. Brush the dumplings thinly with milk.
  31. 31. Bake them in the oven for about 20 minutes until golden brown.
  32. 32. Serve the dumplings hot or cold.
