🍽️ Turkey Rolls with Filling in Tomato Sauce

Ingredients
- Cherry tomatoes 1000 g
- Onions, yellow 2 pcs.
- Garlic cloves 2 pcs.
- Olive oil 2 tbsp
- Red wine, dry 100 ml
- Salt pinch
- Pepper, black ground pinch
- Sugar pinch
- Pine nuts 25 g
- Tomatoes, dried 25 g
- Mascarpone 100 g
- Parmesan 30 g
- Turkey breast cutlets 600 g
Instructions
- 1. Bring about 1 liter of water to a boil in a pot.
- 2. Wash the tomatoes thoroughly.
- 3. Cut a small cross into the bottom of each tomato.
- 4. Pour the boiling water over the tomatoes in a bowl.
- 5. Let the tomatoes sit in the hot water for a short time.
- 6. Drain the hot water.
- 7. Rinse the tomatoes with cold water to stop the cooking process.
- 8. Peel the skin off the tomatoes.
- 9. Remove the stem areas of the tomatoes.
- 10. Dice the tomatoes roughly.
- 11. Halve the onions and peel them.
- 12. Cut the onions into cubes.
- 13. Peel the garlic.
- 14. Dice the garlic.
- 15. Heat oil in a pot over high heat.
- 16. Sauté the onions and garlic for about 2 minutes.
- 17. Add the diced tomatoes.
- 18. Deglaze the mixture with wine.
- 19. Season the sauce with salt, pepper, and sugar.
- 20. Simmer the sauce over medium heat for about 20 minutes.
- 21. Preheat the oven to 200 °C with fan (convection).
- 22. Finely chop the pine nuts.
- 23. Finely chop the dried tomatoes.
- 24. Mix the pine nuts and dried tomatoes in a bowl with mascarpone and parmesan.
- 25. Season the filling with salt and pepper.
- 26. Rinse the turkey cutlets.
- 27. Pat the cutlets dry.
- 28. Place the cutlets between cling film.
- 29. Pound the cutlets flat.
- 30. Salt and pepper the cutlets.
- 31. Spread the mascarpone cream on one side of the cutlets.
- 32. Roll the cutlets up tightly.
- 33. Secure the rolls with skewers.
- 34. Pour the tomato sauce into a baking dish.
- 35. Place the turkey rolls in the sauce.
- 36. Bake the rolls in the oven for about 30 minutes.
- 37. Turn the rolls once during cooking.
- 38. Remove the baking dish from the oven.
- 39. Serve the stuffed turkey rolls on plates.
