🍰 Delicate Plum-Filled Cookies

Ingredients
- Butter 125 g
- Powdered sugar 80 g
- Eggs 2 pcs
- Wheat flour, Type 405 250 g
- Salt Pinch
- Baking powder 1 tsp
- Plum puree 150 g
- Brown sugar 2 tbsp
Instructions
- 1. Put butter, powdered sugar, and one egg into a large mixing bowl.
- 2. Beat the ingredients with a hand mixer until creamy and fluffy.
- 3. Add flour, salt, and baking powder to the bowl.
- 4. Knead everything together into a smooth dough.
- 5. Place the dough in the fridge for a while to let it rest.
- 6. Preheat the oven to 175 degrees Celsius with top and bottom heat.
- 7. Separate the remaining egg and use the yolk for something else.
- 8. Lightly dust your work surface with flour.
- 9. Roll out the dough thinly.
- 10. Cut out about 40 circles with a fluted edge and a diameter of 6 cm.
- 11. Lightly whisk the egg white.
- 12. Brush 20 of the dough circles with the egg white.
- 13. Place about one teaspoon of plum puree in the center of each brushed circle.
- 14. Cover each filling with another dough circle.
- 15. Press the edges firmly together with a fork.
- 16. Place the cookies on a baking sheet lined with baking paper.
- 17. Put the baking sheet in the fridge for about 10 minutes.
- 18. Bake the cookies for 15 to 18 minutes until they are lightly golden brown.
- 19. Dip the still hot cookies immediately into raw cane sugar.
- 20. Let the cookies cool on a wire rack.
