  1. 1. Put butter, powdered sugar, and one egg into a large mixing bowl.
  2. 2. Beat the ingredients with a hand mixer until creamy and fluffy.
  3. 3. Add flour, salt, and baking powder to the bowl.
  4. 4. Knead everything together into a smooth dough.
  5. 5. Place the dough in the fridge for a while to let it rest.
  6. 6. Preheat the oven to 175 degrees Celsius with top and bottom heat.
  7. 7. Separate the remaining egg and use the yolk for something else.
  8. 8. Lightly dust your work surface with flour.
  9. 9. Roll out the dough thinly.
  10. 10. Cut out about 40 circles with a fluted edge and a diameter of 6 cm.
  11. 11. Lightly whisk the egg white.
  12. 12. Brush 20 of the dough circles with the egg white.
  13. 13. Place about one teaspoon of plum puree in the center of each brushed circle.
  14. 14. Cover each filling with another dough circle.
  15. 15. Press the edges firmly together with a fork.
  16. 16. Place the cookies on a baking sheet lined with baking paper.
  17. 17. Put the baking sheet in the fridge for about 10 minutes.
  18. 18. Bake the cookies for 15 to 18 minutes until they are lightly golden brown.
  19. 19. Dip the still hot cookies immediately into raw cane sugar.
  20. 20. Let the cookies cool on a wire rack.
