Ingredients
- milk 250 ml
- butter 3 tbsp
- yeast, fresh 0.5 pcs
- sugar 160 g
- wheat flour, Type 405 410 g
- eggs 3 pcs
- salt pinch
- chocolate, dark 60 g
- whipping cream 150 g
- vanilla sugar 15 g
- powdered sugar 2 tbsp
Instructions
- 1. Put 150 milliliters of milk, butter, yeast, and 20 grams of sugar into the mixing bowl.
- 2. Mix the ingredients for 5 minutes on speed 1 at 37 degrees Celsius.
- 3. Let the mixture rest for 10 minutes with the device turned off.
- 4. Add 120 grams of sugar, flour, 1 egg, and a pinch of salt.
- 5. Knead the ingredients for 30 seconds on speed 4.
- 6. Place the dough into a bowl.
- 7. Let the dough rise, covered, in a warm place for about 60 minutes.
- 8. Wait until the dough has visibly increased in size.
- 9. Cut the chocolate into 6 pieces.
- 10. Divide the yeast dough on a floured surface into 6 portions.
- 11. Knead in a little flour if necessary.
- 12. Shape each dough portion into a ball around a piece of chocolate.
- 13. Place the balls with some distance between them in the greased steamer insert.
- 14. Let the dumplings rise, covered, for 15 minutes.
- 15. Heat the remaining milk together with 20 grams of sugar, cream, and vanilla sugar in the mixing bowl.
- 16. Cook the mixture for 4 minutes on speed 3 at 100 degrees Celsius.
- 17. Separate the remaining eggs.
- 18. Whisk the egg yolks in a bowl with 4 to 6 tablespoons of the hot milk.
- 19. Set the Monsieur Cuisine to 3 minutes, speed 3 at 70 degrees Celsius.
- 20. Start the device.
- 21. Pour the egg yolk mixture slowly through the lid opening.
- 22. Close the lid during operation with the measuring cup.
- 23. Keep the sauce warm.
- 24. Fill 500 milliliters of water into the mixing bowl.
- 25. Place the steam cooking insert on top.
- 26. Close the container with the lid.
- 27. Steam everything for 20 minutes on the steam cooking setting.
- 28. Wait until the dumplings are cooked through.
- 29. Extend the cooking time by about 3 to 5 minutes if necessary.
- 30. Dust the filled yeast dumplings with powdered sugar.
- 31. Serve the dumplings together with the sauce.
