  1. 1. Preheat the oven to 200 degrees Celsius with fan.
  2. 2. Clean the mushrooms carefully with a kitchen towel.
  3. 3. Gently twist out the stems of the mushrooms.
  4. 4. Wash the parsley and shake it dry.
  5. 5. Pick the parsley leaves off the stems.
  6. 6. Chop the parsley leaves very finely.
  7. 7. Mix the chopped parsley in a bowl with olive oil, salt, and pepper.
  8. 8. Add the vegan grated cheese substitute to the parsley mixture.
  9. 9. Marinate the mixture with herb oil.
  10. 10. Place the empty mushroom caps in a baking dish.
  11. 11. Fill the mushroom caps with the vegan cheese mixture.
  12. 12. Bake the stuffed mushrooms in the oven for about 20 minutes.
