🍽️ Stuffed Mushrooms with Potatoes

Ingredients
- onions, yellow 1 pc.
- garlic cloves 1 pc.
- olive oil 20 ml
- mushrooms, white 300 g
- beef mince 250 g
- salt 2 tsp
- pepper, black ground 2 tsp
- potatoes, waxy 1 kg
- vegetable broth 1 L
- cheddar 20 g
- sour cream 200 g
- whipping cream 100 ml
- wheat flour, Type 405 40 g
- tomato paste 20 g
Instructions
- 1. Peel the onion and cut it in half. Peel the garlic clove. Put both into the mixing container. Insert the measuring cup and chop the ingredients for 10 seconds on speed 10. Use a spatula to push the mixture down from the inner wall. Add the oil. Sauté the mixture for 3 minutes at 120 degrees without the measuring cup.
- 2. Clean the mushrooms. Remove the stems. Gently scrape the inside of the mushroom caps with a spoon to make more room for the meat. Add the scraped-out parts to the onions in the mixing container. Season the minced meat with one teaspoon of salt and one teaspoon of pepper each. Fill the minced meat into the mushroom caps. Put the remaining minced meat into the mixing container. Fry it for 3 minutes at 120 degrees without the measuring cup.
- 3. Place the stuffed mushrooms in the shallow steaming insert. Peel the potatoes and cut them into coarse pieces. Distribute the potatoes in the deep steaming pot. Season them with one teaspoon of salt and one teaspoon of pepper each. Add the warm vegetable broth to the mixing container. Place the steaming pot on top. Hang in the steaming insert. Close everything with the lid. Steam the dishes for 25 minutes on speed 1 at 120 degrees. Distribute the cheese over the mushrooms 5 minutes before the end of the cooking time. Put the lid back on.
- 4. Remove the steaming pot and set it aside. Pour the liquid from the mixing container through a sieve into a bowl to catch the broth. Put half of the broth along with the sieve contents back into the mixing container.
- 5. Add crème fraîche, cream, flour, and tomato paste to the mixing container. Puree the ingredients for 20 seconds. Start at a low speed and gradually increase to speed 10. Insert the measuring cup. Then boil the sauce for 5 minutes on speed 1 at 100 degrees without the measuring cup.
- 6. Serve the stuffed mushrooms together with the potatoes and the sauce. Enjoy your meal! Tip: Instead of potatoes, mashed potatoes, a salad, or baguette also go well as a side dish.
