🍰 Stuffed Brioche Triplets

Ingredients
- milk 160 ml
- yeast, fresh 0.5 pcs
- sugar 40 g
- butter 125 g
- salt pinch
- eggs 3 pcs
- wheat flour, type 405 450 g
- blueberries, fresh 100 g
- chocolate, milk 100 g
Instructions
- 1. Heat 150 milliliters of milk in a pot for about one minute until it is lukewarm.
- 2. Crumble the yeast into the warm milk and stir in one tablespoon of sugar until it dissolves.
- 3. Cover the pot and let the yeast milk rest for about ten minutes.
- 4. Pour the yeast milk into a bowl.
- 5. Add the remaining sugar, the butter, the salt, two eggs, and the flour.
- 6. Knead everything into a smooth dough.
- 7. Let the dough rise for about one hour.
- 8. Preheat the oven to 200 degrees Celsius fan.
- 9. Thoroughly wash the blueberries.
- 10. Remove any bad berries.
- 11. Let the berries drain.
- 12. Break the chocolate into twelve pieces.
- 13. Grease a muffin tin.
- 14. Divide the dough on a floured surface into twelve portions.
- 15. Divide each portion into four small pieces.
- 16. Wrap one dough piece around a piece of chocolate.
- 17. Shape the other two dough pieces into balls.
- 18. Fill each ball with one to two blueberries.
- 19. Place four balls into one cavity of the muffin tin.
- 20. Place three filled dough balls on top of the four balls.
- 21. Repeat this process for all brioche triplets.
- 22. Let the triplets rise for ten minutes covered.
- 23. Separate the remaining egg.
- 24. Whisk the yolk with one tablespoon of milk in a bowl.
- 25. Brush the filled brioche triplets with the egg yolk and milk mixture.
- 26. Bake the triplets in the oven for about 15 to 18 minutes.
- 27. Remove the brioche triplets from the oven.
- 28. Let them cool.
- 29. Serve them fresh.
