  1. 1. Clean the spring onions, pat dry, trim the roots and slice into thin rings. Drain the olives and chop finely. In a bowl, mix the goat cream cheese, chopped olives and spring onions and season with salt and pepper.
  2. 2. Wash the peppers, remove the stems and seeds and slice into thin strips. Wash the salad leaves thoroughly. Rinse the turkey breast fillets, pat dry with kitchen paper and season with salt and pepper.
  3. 3. Heat the oil in a pan over high heat and fry the cutlets for about 2–3 minutes. Add the pepper strips and fry for a further approx. 3 minutes.
  4. 4. Meanwhile, halve the buns and toast briefly in a toaster. Spread with the goat cheese mixture. Place the turkey pieces, peppers and salad on the bottom halves of the buns, top with the upper halves and serve. Enjoy your meal!
