  1. 1. Cut the avocado in half, remove the pit, and scoop the flesh out of the skin with a spoon. Dice the flesh finely. Wash the apple, quarter it, remove the core, and dice it as well. Separate 4 lettuce leaves, wash them, and shake them dry.
  2. 2. In a bowl, combine the mayonnaise with the avocado and apple. Season with salt and pepper.
  3. 3. Toast the slices of bread as desired and spread them with the avocado mayonnaise. On 4 slices, place a lettuce leaf and chicken slices. Top with the remaining 4 slices, cut them diagonally, and serve. Enjoy your meal!
