🍽️ Chicken meatballs with kohlrabi vegetables and mashed potatoes

Ingredients
- Carrots 4 pcs.
- Parsnips 3 pcs.
- Potatoes, floury 2 pcs.
- Salt pinch
- Onions, yellow 1 pc.
- Kohlrabi 4 pcs.
- Parsley, fresh 20 g
- Poultry minced meat 600 g
- Eggs 1 pc.
- Breadcrumbs 2 tbsp
- Pepper, black ground pinch
- Oil 5 tbsp
- Milk 100 ml
- Cream cheese, plain 6 tbsp
- Nutmeg, ground 0.25 tsp
Instructions
- 1. Peel the carrot, the parsnip, and the potato.
- 2. Remove the ends from the vegetables.
- 3. Cut the vegetables into coarse cubes.
- 4. Fill a pot with salted water.
- 5. Add the vegetables to the pot.
- 6. Bring the water to a boil.
- 7. Cover the pot.
- 8. Cook the vegetables on medium heat for approx. 15–20 minutes until soft.
- 9. Halve the onion.
- 10. Peel the onion.
- 11. Dice the onion finely.
- 12. Peel the kohlrabi.
- 13. Remove woody ends from the kohlrabi if necessary.
- 14. Cut the kohlrabi into sticks approx. 1 cm thick.
- 15. Wash the parsley.
- 16. Shake the parsley dry.
- 17. Remove the coarse stems from the parsley.
- 18. Chop the parsley.
- 19. Place the minced meat in a bowl.
- 20. Add the onion cubes to the bowl.
- 21. Add half of the parsley to the bowl.
- 22. Add an egg to the bowl.
- 23. Add 2 tbsp of breadcrumbs to the bowl.
- 24. Season the mixture with salt.
- 25. Season the mixture with pepper.
- 26. Knead everything into a mixture.
- 27. Form approx. 5 cm large meatballs from the mixture.
- 28. Heat 3 tbsp of oil in a pan.
- 29. Set the heat to medium to high.
- 30. Fry the meatballs for approx. 2 minutes on each side.
- 31. Add the kohlrabi to the pan.
- 32. Cook the kohlrabi for approx. 4 minutes.
- 33. Deglaze the vegetables with 100 ml of water.
- 34. Cover the pan.
- 35. Let the vegetables simmer on low heat for approx. 10 minutes.
- 36. Drain the vegetables in a sieve.
- 37. Add 100 ml of milk to the drained vegetables.
- 38. Add 3 tbsp of cream cheese to the vegetables.
- 39. Process the vegetables into mashed potatoes using a potato masher.
- 40. Season the vegetable mash with salt.
- 41. Season the vegetable mash with pepper.
- 42. Season the vegetable mash with nutmeg.
- 43. Fold in the remaining parsley into the mash.
- 44. Add 3 tbsp of cream cheese to the kohlrabi.
- 45. Stir the cream cheese into the kohlrabi.
- 46. Season the sauce with salt.
- 47. Season the sauce with pepper.
- 48. Plate the meatballs with the vegetable mash.
- 49. Serve the meatballs with the cream kohlrabi.
