  1. 1. Peel the carrot, the parsnip, and the potato.
  2. 2. Remove the ends from the vegetables.
  3. 3. Cut the vegetables into coarse cubes.
  4. 4. Fill a pot with salted water.
  5. 5. Add the vegetables to the pot.
  6. 6. Bring the water to a boil.
  7. 7. Cover the pot.
  8. 8. Cook the vegetables on medium heat for approx. 15–20 minutes until soft.
  9. 9. Halve the onion.
  10. 10. Peel the onion.
  11. 11. Dice the onion finely.
  12. 12. Peel the kohlrabi.
  13. 13. Remove woody ends from the kohlrabi if necessary.
  14. 14. Cut the kohlrabi into sticks approx. 1 cm thick.
  15. 15. Wash the parsley.
  16. 16. Shake the parsley dry.
  17. 17. Remove the coarse stems from the parsley.
  18. 18. Chop the parsley.
  19. 19. Place the minced meat in a bowl.
  20. 20. Add the onion cubes to the bowl.
  21. 21. Add half of the parsley to the bowl.
  22. 22. Add an egg to the bowl.
  23. 23. Add 2 tbsp of breadcrumbs to the bowl.
  24. 24. Season the mixture with salt.
  25. 25. Season the mixture with pepper.
  26. 26. Knead everything into a mixture.
  27. 27. Form approx. 5 cm large meatballs from the mixture.
  28. 28. Heat 3 tbsp of oil in a pan.
  29. 29. Set the heat to medium to high.
  30. 30. Fry the meatballs for approx. 2 minutes on each side.
  31. 31. Add the kohlrabi to the pan.
  32. 32. Cook the kohlrabi for approx. 4 minutes.
  33. 33. Deglaze the vegetables with 100 ml of water.
  34. 34. Cover the pan.
  35. 35. Let the vegetables simmer on low heat for approx. 10 minutes.
  36. 36. Drain the vegetables in a sieve.
  37. 37. Add 100 ml of milk to the drained vegetables.
  38. 38. Add 3 tbsp of cream cheese to the vegetables.
  39. 39. Process the vegetables into mashed potatoes using a potato masher.
  40. 40. Season the vegetable mash with salt.
  41. 41. Season the vegetable mash with pepper.
  42. 42. Season the vegetable mash with nutmeg.
  43. 43. Fold in the remaining parsley into the mash.
  44. 44. Add 3 tbsp of cream cheese to the kohlrabi.
  45. 45. Stir the cream cheese into the kohlrabi.
  46. 46. Season the sauce with salt.
  47. 47. Season the sauce with pepper.
  48. 48. Plate the meatballs with the vegetable mash.
  49. 49. Serve the meatballs with the cream kohlrabi.
