🍽️ Fried Pork Tenderloin with Papas arrugadas and Mild Mojo Rojo

Ingredients
- potatoes, mainly waxy 1 kg
- salt pinch
- peppers, red 3 pcs
- onions, red 1 pc
- garlic cloves 1 pc
- pork fillet 600 g
- oil 4 tbsp
- butter 2 tbsp
- balsamic vinegar, dark 1 tbsp
- sugar pinch
- sea salt 5 g
- pepper, black ground pinch
Instructions
- 1. Preheat the oven to 180 degrees Celsius with fan.
- 2. Wash the potatoes thoroughly.
- 3. Place the potatoes in a pot with salted water.
- 4. Cover the potatoes with the water.
- 5. Bring the water to a boil with the lid on, using high heat.
- 6. Let the potatoes cook for about 15 to 18 minutes.
- 7. Wash the peppers.
- 8. Halve the peppers.
- 9. Take three of the pepper halves.
- 10. Place these three halves on a baking sheet.
- 11. Roast the peppers in the oven for about 15 minutes.
- 12. Slice the remaining pepper halves lengthwise into thin strips.
- 13. Halve the red onion.
- 14. Peel the red onion.
- 15. Cut the red onion into fine strips.
- 16. Halve the garlic.
- 17. Peel the garlic.
- 18. Finely chop the garlic.
- 19. Rinse the pork tenderloin.
- 20. Pat the meat dry with kitchen paper.
- 21. Season the meat with salt.
- 22. Heat 1 tablespoon of oil in a pan on high heat.
- 23. Sear the meat on all sides for about 2 minutes.
- 24. Remove the pan from the heat.
- 25. Add 2 tablespoons of butter to the pan.
- 26. Add half of the chopped garlic to the pan.
- 27. Swirl everything together well.
- 28. Wrap the meat in aluminum foil.
- 29. Place the meat in the oven for about 8 minutes.
- 30. Remove the roasted peppers from the oven.
- 31. Place the roasted peppers in a tall container.
- 32. Add the remaining garlic to the container.
- 33. Add vinegar to the container.
- 34. Add 2 to 3 tablespoons of oil to the container.
- 35. Blend the mixture until smooth.
- 36. Season the sauce with salt and sugar.
- 37. Drain the potatoes.
- 38. Mix the potatoes with sea salt.
- 39. Bring the potatoes to a boil again.
- 40. Reduce the heat to the lowest setting.
- 41. Cover the pot.
- 42. Let the potatoes steam for about 5 to 10 minutes.
- 43. Shake the potatoes occasionally.
- 44. Heat 1 tablespoon of oil in the pan drippings on medium heat.
- 45. Sauté the red onion in it for about 3 to 4 minutes.
- 46. Sauté the pepper strips in it for about 3 to 4 minutes.
- 47. Stir in 2 tablespoons of the Mojo sauce.
- 48. Stir in 2 to 3 tablespoons of water.
- 49. Season the vegetables with salt, pepper, and sugar.
- 50. Plate the pork tenderloin.
- 51. Add the pepper vegetables.
- 52. Add the Papas arrugadas.
- 53. Add the remaining Mojo rojo.
- 54. Serve the dish.
