  1. 1. Peel and finely chop the garlic. Rinse the chicken, pat it dry, and cut it in half lengthwise. In a bowl, combine the garlic, chicken, 1 tbsp oil, salt, and pepper, and set aside to marinate.
  2. 2. Peel, wash, and roughly dice the potatoes. In a pot, bring salted water to a boil and cook covered over medium heat for about 20 minutes.
  3. 3. Halve the shallots, peel them, and finely dice. Wash the tomatoes, remove the stems, and dice them as well.
  4. 4. Heat 1 tbsp oil in a pan over medium heat and fry the chicken for about 10–12 minutes, turning occasionally.
  5. 5. Meanwhile, wash the herbs, shake them dry, pluck off the leaves, and chop them separately. In a bowl, combine mint, shallots, and tomatoes. Season with salt, pepper, sugar, olive oil, and balsamic vinegar.
  6. 6. Drain the potatoes, add 4 tbsp butter, and mash them using a potato masher. Fold in the parmesan and parsley, and season with salt and pepper.
  7. 7. Serve the fried chicken alongside the herb-parmesan mashed potatoes and the tomato salad on plates. Enjoy your meal!
