🍽️ Fried Chicken with Parmesan Mashed Potatoes and Tomato Salad

Ingredients
- garlic cloves 1 pc.
- chicken breast fillets 600 g
- oil 2 tbsp
- salt pinch
- pepper, black ground pinch
- potatoes, floury 1 kg
- shallots 2 pc.
- vine tomatoes 8 pc.
- mint, fresh 20 g
- parsley, fresh 40 g
- sugar pinch
- olive oil 2 tbsp
- balsamic vinegar, light 1 tbsp
- butter 4 tbsp
- parmesan, grated 4 tbsp
Instructions
- 1. Peel and finely chop the garlic. Rinse the chicken, pat it dry, and cut it in half lengthwise. In a bowl, combine the garlic, chicken, 1 tbsp oil, salt, and pepper, and set aside to marinate.
- 2. Peel, wash, and roughly dice the potatoes. In a pot, bring salted water to a boil and cook covered over medium heat for about 20 minutes.
- 3. Halve the shallots, peel them, and finely dice. Wash the tomatoes, remove the stems, and dice them as well.
- 4. Heat 1 tbsp oil in a pan over medium heat and fry the chicken for about 10–12 minutes, turning occasionally.
- 5. Meanwhile, wash the herbs, shake them dry, pluck off the leaves, and chop them separately. In a bowl, combine mint, shallots, and tomatoes. Season with salt, pepper, sugar, olive oil, and balsamic vinegar.
- 6. Drain the potatoes, add 4 tbsp butter, and mash them using a potato masher. Fold in the parmesan and parsley, and season with salt and pepper.
- 7. Serve the fried chicken alongside the herb-parmesan mashed potatoes and the tomato salad on plates.
