🍽️ Fried Chicken Breast with Pineapple

Ingredients
- chicken breast fillets 600 g
- garlic cloves 1 pc
- organic limes 1 pc
- chili pepper mix 1 pc
- olive oil 4 tbsp
- tomato paste 1 tsp
- rose paprika 1 tsp
- basmati rice 300 g
- salt pinch
- pineapple 1 pc
- coriander, fresh 10 g
Instructions
- 1. Rinse the chicken breast fillets, pat dry with a kitchen towel and cut into strips about 1 cm wide. Peel the garlic and chop finely. Rinse the lime, grate the zest finely and squeeze out the juice. Rinse the chili pepper, halve, remove the seeds and chop finely.
- 2. In a bowl, mix the chicken strips well with 2 tbsp oil, tomato paste, garlic, paprika powder, chili pepper, lime zest and 2 tbsp lime juice. Let the chicken pieces marinate.
- 3. Meanwhile, bring the rice in a pot with about 700 ml salted water to a boil and cook over low heat for approx. 12 minutes. Peel the pineapple, remove the core and cut into cubes about 2 cm in size.
- 4. Heat 1 tbsp oil in a pan at high temperature and fry the pineapple cubes for about 5 minutes all over. Then transfer to a bowl and wipe out the pan.
- 5. Heat 1 tbsp oil in the pan again over medium to high heat and fry the chicken strips for about 5 minutes until crispy. Then add the pineapple, mix everything well and fry for another approx. 2 minutes.
- 6. Rinse the coriander, shake dry and pluck the leaves. Serve the rice together with the fried chicken and pineapple on plates and sprinkle with coriander.
