  1. 1. Rinse the chicken breast fillets, pat dry with a kitchen towel and cut into strips about 1 cm wide. Peel the garlic and chop finely. Rinse the lime, grate the zest finely and squeeze out the juice. Rinse the chili pepper, halve, remove the seeds and chop finely.
  2. 2. In a bowl, mix the chicken strips well with 2 tbsp oil, tomato paste, garlic, paprika powder, chili pepper, lime zest and 2 tbsp lime juice. Let the chicken pieces marinate.
  3. 3. Meanwhile, bring the rice in a pot with about 700 ml salted water to a boil and cook over low heat for approx. 12 minutes. Peel the pineapple, remove the core and cut into cubes about 2 cm in size.
  4. 4. Heat 1 tbsp oil in a pan at high temperature and fry the pineapple cubes for about 5 minutes all over. Then transfer to a bowl and wipe out the pan.
  5. 5. Heat 1 tbsp oil in the pan again over medium to high heat and fry the chicken strips for about 5 minutes until crispy. Then add the pineapple, mix everything well and fry for another approx. 2 minutes.
  6. 6. Rinse the coriander, shake dry and pluck the leaves. Serve the rice together with the fried chicken and pineapple on plates and sprinkle with coriander.
