  1. 1. Wash the zucchini thoroughly and trim the ends. Wash the carrots, peel them, and remove the ends. Drain the beetroot. Slice the vegetables one by one into thin slices.
  2. 2. Cut the onions in half, peel them, and dice them finely. Peel the garlic and dice it as well. Wash the herbs, shake off the water, pluck the leaves from the stems, and chop them finely. Crumble the feta roughly with your hands.
  3. 3. Heat 1 tablespoon of oil in a pan over high heat. Fry the zucchini in the hot oil for about 3 minutes. Season with salt and pepper and set aside on a plate. Repeat the process for the carrots and the beetroot.
  4. 4. Heat the pan again with 1 tablespoon of oil over high heat and sauté the onions together with the garlic for approx. 2 minutes until translucent. Remove the pan from the heat and mix the onions with the herbs and the feta.
  5. 5. Plate the fried vegetables, drizzle with a little olive oil, and sprinkle the herb-feta mixture over them. Serve with flatbread. Enjoy your meal! Tip: This dish is great for using up leftover vegetables from the fridge.
