🍽️ Fried Asparagus with Egg, Bacon and Mustard Cream

Ingredients
- Eggs 4 pcs
- green asparagus 2 bunches
- oil 1 tbsp
- bacon strips 125 g
- mustard 2 tbsp
- crème fraîche 200 g
- salt pinch
- sugar pinch
- pepper, black ground pinch
Instructions
- 1. In a pot, bring about 1 liter of water to a boil and cover. Add the eggs to the boiling water and poach them for about 6 minutes until soft-boiled. Then drain and shock them with cold water.
- 2. Wash the asparagus thoroughly, peel the lower third, and remove the woody ends. Cut the asparagus diagonally into pieces. Heat the oil in a pan over high heat and fry the bacon in it for about 2 minutes. Then add the asparagus and fry for another approx. 5 minutes.
- 3. In the meantime, mix the mustard with crème fraîche in a bowl. Season to taste with salt, sugar, and pepper.
- 4. Plate the fried asparagus together with the crispy bacon. Place the soft-boiled eggs on top and serve with the mustard cream. Enjoy your meal!
