  1. 1. In a pot, bring about 1 liter of water to a boil and cover. Add the eggs to the boiling water and poach them for about 6 minutes until soft-boiled. Then drain and shock them with cold water.
  2. 2. Wash the asparagus thoroughly, peel the lower third, and remove the woody ends. Cut the asparagus diagonally into pieces. Heat the oil in a pan over high heat and fry the bacon in it for about 2 minutes. Then add the asparagus and fry for another approx. 5 minutes.
  3. 3. In the meantime, mix the mustard with crème fraîche in a bowl. Season to taste with salt, sugar, and pepper.
  4. 4. Plate the fried asparagus together with the crispy bacon. Place the soft-boiled eggs on top and serve with the mustard cream. Enjoy your meal!
