🍽️ Pan-fried Rice with Crunchy Vegetables and Crispy Onions

Ingredients
- long-grain rice 300 g
- salt pinch
- snow peas 200 g
- carrots 3 pcs.
- zucchini 1 pc.
- onions, red 1 pc.
- cilantro, fresh 20 g
- eggs 3 pcs.
- soy sauce 3 tbsp
- milk 5 tbsp
- oil 3 tbsp
- chili, ground 0.25 tsp
- roasted onions 4 tbsp
Instructions
- 1. Fill a pot with about 700 milliliters of water and add a pinch of salt.
- 2. Bring the water to a boil and add the rice.
- 3. Reduce the heat to the lowest setting and cover the pot.
- 4. Let the rice cook for about 10 minutes until it is soft.
- 5. Wash the sugar snap peas, carrots, and zucchini under running water.
- 6. Trim the ends of the sugar snap peas and cut them diagonally into bite-sized pieces.
- 7. Peel the carrots and cut them in half lengthwise.
- 8. Slice the carrot halves into thin rings.
- 9. Grate the zucchini coarsely using a grater.
- 10. Peel the onion and cut it into eight equal wedges.
- 11. Carefully separate the individual onion layers from each other.
- 12. Wash the cilantro and pat it dry with a kitchen towel.
- 13. Pluck the fresh cilantro leaves off the tough stems.
- 14. Whisk the eggs in a small bowl.
- 15. Add some soy sauce and a splash of milk to the eggs.
- 16. Stir the mixture with a fork or whisk until it is homogeneous.
- 17. Heat some oil in a large frying pan over medium heat.
- 18. Add the onion wedges and carrot rings to the hot pan.
- 19. Fry the vegetables for about 2 minutes until they are lightly browned.
- 20. Add the grated zucchini and sugar snap peas to the pan.
- 21. Fry the vegetables for another 2 minutes until they are al dente.
- 22. Season the vegetables with salt, pepper, and a pinch of chili flakes.
- 23. Add the cooked rice to the vegetable mixture in the pan.
- 24. Mix the rice and vegetables thoroughly together.
- 25. Fry the mixture while stirring constantly for about 3 minutes.
- 26. Pour the egg-soy mixture evenly over the rice.
- 27. Continue stirring until the egg is fully cooked and set.
- 28. Plate the fried rice onto individual plates.
- 29. Sprinkle the dish with crispy fried onions.
- 30. Garnish with the fresh cilantro leaves.
