🍽️ Fried Cod with Basil Mashed Potatoes and Beans

Ingredients
- Cod, frozen 600 g
- Potatoes, mostly waxy 1 kg
- Salt pinch
- Green beans 600 g
- Basil, fresh 30 g
- Organic Lemon 1 pc.
- Pepper, black ground pinch
- Sunflower oil 2 tbsp
- Butter 5 tbsp
- Milk 100 ml
Instructions
- 1. Ideally, thaw the cod overnight in the refrigerator.
- 2. Wash the potatoes thoroughly, peel them, and cut them into coarse cubes.
- 3. Place the potatoes in a pot and cover them just with salted water.
- 4. Bring the water to a boil and cook the potatoes with the lid on for about 20 minutes until soft.
- 5. Bring about 2 liters of salted water to a boil in a separate pot.
- 6. Wash the beans and trim the ends.
- 7. Cook the beans in the boiling water for about 8 to 10 minutes until al dente.
- 8. Wash the basil, shake it dry, and pluck the leaves off.
- 9. Finely chop the basil leaves.
- 10. Wash the lemon and cut it in half.
- 11. Squeeze the juice from the lemon.
- 12. Rinse the cod and pat it dry with kitchen paper.
- 13. Season the fish with salt, pepper, and the lemon juice.
- 14. Heat the oil in a frying pan over high heat.
- 15. Fry the cod on all sides for about 3 to 4 minutes until golden brown, depending on thickness.
- 16. Reduce the heat slightly and add 1 tablespoon of butter.
- 17. Finish cooking the fish for another 4 to 5 minutes.
- 18. Drain the potatoes and let them steam dry for a moment in the same pot.
- 19. Mash the potatoes with 3 tablespoons of butter.
- 20. Add some milk if desired.
- 21. Season the mash with salt and pepper to taste.
- 22. Stir the chopped basil into the mash.
- 23. Drain the beans.
- 24. Toss the beans in the same pot with 1 tablespoon of butter.
- 25. Season the beans with salt and pepper to taste.
- 26. Plate the basil mashed potatoes, beans, and cod.
- 27. Drizzle the dish with the pan juices.
