  2. 2. Cut off the woody, lower ends of the asparagus stalks.
  3. 3. Halve the lemon and squeeze the juice into a small bowl.
  4. 4. Wash the arugula and dry it thoroughly in a salad spinner.
  5. 5. Heat two tablespoons of oil in a frying pan or grill pan over high heat.
  6. 6. Place the asparagus in the hot pan and sprinkle some salt over it.
  7. 7. Fry the asparagus for about six to eight minutes until crispy.
  8. 8. Turn the asparagus occasionally so that it cooks evenly.
  9. 9. Mix balsamic vinegar with olive oil in a separate bowl.
  10. 10. Gently fold the dry arugula into the dressing mixture.
  11. 11. Finally, season the arugula salad to taste with salt and pepper.
  12. 12. Remove the fried asparagus from the pan and place it on a serving plate.
  13. 13. Distribute the seasoned arugula evenly over the asparagus.
  14. 14. Drizzle the remaining dressing over the asparagus and vegetables.
  15. 15. Grate fresh Manchego cheese over the finished dish.
