🍽️ Crispy Green Asparagus with Manchego Cheese

Ingredients
- green asparagus 2 bunch
- organic lemons 1 pc.
- arugula 100 g
- oil 2 tbsp
- balsamic vinegar, dark 1 tbsp
- olive oil 3 tbsp
- salt pinch
- pepper, black ground pinch
- Manchego 75 g
Instructions
- 1. Thoroughly wash the green asparagus under running water.
- 2. Cut off the woody, lower ends of the asparagus stalks.
- 3. Halve the lemon and squeeze the juice into a small bowl.
- 4. Wash the arugula and dry it thoroughly in a salad spinner.
- 5. Heat two tablespoons of oil in a frying pan or grill pan over high heat.
- 6. Place the asparagus in the hot pan and sprinkle some salt over it.
- 7. Fry the asparagus for about six to eight minutes until crispy.
- 8. Turn the asparagus occasionally so that it cooks evenly.
- 9. Mix balsamic vinegar with olive oil in a separate bowl.
- 10. Gently fold the dry arugula into the dressing mixture.
- 11. Finally, season the arugula salad to taste with salt and pepper.
- 12. Remove the fried asparagus from the pan and place it on a serving plate.
- 13. Distribute the seasoned arugula evenly over the asparagus.
- 14. Drizzle the remaining dressing over the asparagus and vegetables.
- 15. Grate fresh Manchego cheese over the finished dish.
- 16. Serve the fried green asparagus with Manchego immediately while hot.
